- Here's a simple recipe for Chicken Fried Rice:
Ingredients:
- 2 cups cooked rice (preferably day-old)
- 1 cup cooked chicken, diced or shredded
- 2 tablespoons vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn, etc.)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Sliced green onions for garnish
Instructions:
1. Prepare Ingredients: Ensure all ingredients are prepped and ready before starting.
2. Cook Eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the pan and set aside.
3. Sauté Aromatics: In the same pan, add the remaining 1 tablespoon of oil. Add the chopped onion and garlic, sauté until fragrant and translucent.
4. Add Vegetables and Chicken: Add the mixed vegetables to the pan and cook until they are tender. Then, add the cooked chicken and stir-fry for another 2-3 minutes.
5. Combine Ingredients: Add the cooked rice to the pan, breaking up any clumps. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Mix everything well and stir-fry for a few minutes until the rice is heated through.
6. Add Eggs: Return the scrambled eggs to the pan and mix them into the rice. Season with salt and pepper to taste.
7. Garnish and Serve: Remove from heat and garnish with sliced green onions. Serve hot.
