  • Bread for meals that anyone can make quickly and easily.
    We focused on the purpose of the bread used as a sandwich.
    Considering eating after secondary processing (topping assembly)
    Many processes (processes) have been omitted to reduce the effort of bread making.
    If you look at the bread itself, it has an ugly shape.
    But it's a great flatbread for sandwiches.
    I plan to upload a video of making and eating various sandwiches with this bread. (๑•᎑•๑)

    (B's (%) = Baker's Percentage = Bakers Percent)
    (Tr (g) = actual input amount = Truth Input)
    ■ Dough Formulation|Total dough weight 565g (for 3 EA)
    B's(%): 100.0%, Tr(g): 300.0g Strong wheat flour (Bread Flour)
    B's(%): 85.0%, Tr(g): 255.0g water (26℃)
    B's(%): 1.0%, Tr(g): 3.0g Instant Dry Yeast
    B's(%): 1.9%, Tr(g): 5.7g Salt
    ■ Process|Room Temperature : 27℃
    1. Put water in the bowl.
    2. Add instant dry yeast and mix well.
    3. After adding salt, dissolve in water.
    4. After adding the flour,
    Mix evenly until no flour is visible (dough temperature 27.9℃).
    5. Primary fermentation: 1 hour 30 minutes at room temperature
    6. Spread the dough wide (refer to the video)
    7. Rest : 15 minutes at room temperature
    8. Dough Division : 3 equal parts (refer to the video)
    9. Secondary fermentation: 30 minutes at room temperature
    10. Put dough into Rofco oven preheated to 250℃
    11. 12 to 15 minutes baking
    ■ Caution: Always be careful when using the oven
    (Because it is very hot, use it after wearing very thick oven gloves)

    설탕이나 오일 혹은 버터를 넣지않아도 샌드위치용 빵으로 충분히 부드러워 보이는데 발효시간 때문일까요? 아님 훌륭한 오븐덕인가요? 늘 딱딱해지는 식감때문에 고민이거든요 ㅠ

      굽고 난 후 식으면 껍질이 딱딱합니다^^
      냉동실에 보관하시다가 먹기 전에 살짝 구워 드시면 좋습니다~!
      오일이나 버터를 넣은 빵이 더 부드럽긴 하지만, 아무것도 넣지 않은 빵이 담백한 장점이 있어요!

      르사프사에서 판매하는 이스트는 저당용, 고당용으로 세분화되어 있습니다.
      르사프사의 인스턴트 드라이 이스트 레드(빨간) : 저당용 이스트(당함량이 낮은 배합, 바게트 등)
      르사프사의 인스턴트 드라이 이스트 골드 : 고당용 이스트(당함량이 높은 배합, 과자빵 등)
      파란색 이스트는 어떤 제품인지 모르겠네요 ㅠㅠ
      이 빵은 대형마트 베이킹코너에서 파는 인스턴트 드라이 이스트 소분 제품을 사용했습니다. 아마 고당용이지 않을까 싶어요 ^^

      May I know the protein and ash content of your flour?

      @@Mukgling They don't even put those ingredients to show us on the packaging. The protein only is shown in the nutrition facts. Which is 12g and 24%. Ingredients in the white flour packaging is Wheat flour, calcium carbonate, Fungal alpha Amylase, Ascorbic Acid, Corn starch ,Niacin, Iron, Thiamin, Riboflavin , Folic Acid. And none of those are shown the percentage.

      @@electron1012 It's not 100% pure wheat flour.
      Judging from the other ingredients, baking flour seems to be correct.

      @@Mukgling not only I follow your instructions when baking is finished it has a glue feeling on the inside. Even bakery breads have glue ish texture to it
