I made it at my restaurant a lot. We didn't use a dehydrator. We would put garlic with the top of the bulb cut off packed tightly in our hotel pan (big metal pan) and drip just a small amount of neutral oil across. Cover with plastic and foil tightly and used the residual heat from the ovens after we turn them off over night. We would take them out for the day while we used the ovens and rinse and repeat for days. Never heard of the dehydrator being used, but guess that can work. I need to make some black garlic too...I love the stuff.

I found a recipe several years ago for black garlic that worked. Wrap the bulbs in wet paper towels (to hold in moisture), then in aluminum foil (to hold in heat), and put in crock pot on lowest setting for 2 weeks. Just check every now and then to make sure there in a little water in the bottom of the pot. I was afraid of it at first, and didn't know what to do with it, but love the taste. I would love more recipes to use black garlic!

Iv made the roasted garlic before but never thought to smoke it. Maybe a workaround in the kitchen if you dont want to set of the smoke alarm is to use a drop or 2 of liquid smoke in the butter. I was unsure of liquid smoke for a long time assuming is was some chemically manufactured American crap in a bottle. But then came across a video on how to make it and it is just the essence of the smoke flavour from the wood that's been distilled and suspended in water. So pretty much the same thing but in a more convenient package.

❤ you just cant have enough garlic its so good for you,, and love cooking with it, even though ive only powdered,,i will be getting both black if i can get it,, and normal fresh garlic,, there were two ingredients that you used for the paste on the meat im not familiar with those two would love to know what they are equivalent too as i will get them if i can, some ingredients are not easy to get here. Had to laugh at the blooper with the flour going everywhere!!!😂 👌👍❤ 🙏Take care my friend and Stay Safe⭐️⭐️⭐️⭐️⭐️

@@WebspoonWorld ❤️🦋🙏 Hi well at least flour is harmless, I have 2 sons living with me and 5 years ago my younger son got splashed with hot oil from a fryingpan🍳😖 I was cooking sweet n sour pork,,, my son got a 2nd degree burn on his hand☹️ as the pan went on fire,,and he moved it to the sink., that when he got splashed😖,,,so I put plenty of ice in a glass bowl with water and told my son to put his hand in it and keep it submerged. I had to keep changing the water making sure it was very cold ,,,then just a few minutes ago my older son burnt himself when the oil splashed out from the pan,, I told him to use the chip fryer in future,,(Cooking can be dangerous!!!)🍳🧄🧅🍄🍚🍜🥮🥧🥫🍱🍸🍺☕️ just had to share that with you.❤🙏 Take care have a wonderful weekend
