Texas is primarily farmland it’s wear majority of cows & bulls & farm animals are raised and sold. So bigger meat from adult animals are common. That’s why they say everything is bigger in Texas. It’s literally big burgers and everything. The meat is natural.

I buy trimmed brisket at HEB for ~$6/pound, smoke it with live oak and hickory15 to 18 hours and get away for roughly twice that $6 accounting my time at 0 and no facility costs. The size of beef ribs can depend on how they're cut and what breed of cattle the meat comes from.

One of you is a Texan at heart. The BBQ Texas is known worldwide for, is dry rub no sauce. Generally speaking... if you are at a BBQ in Texas and the meat is pre sauced, the presumption is mistakes were made and the cook is trying to hide them behind the sauce. In Texas, the meat speaks for itself, and if done correctly, saucing will only deter from experiencing the true flavor of the meat/smoke/bark mix. The bark is the sauce substitute.

Made from two different berries, At Oregon State University.

Y'all Come. I recommend pretty much a 60 mile radiua of Austin. Most places cut the ribs in half or thirds because they're so bug. If you smoke them, you don't cut them. If you get a normal meal amount of food, you can easily feed it out at $30-35 per person. These guys easily bought three meals worth. There are some guys in Germany (the heritage of Texas BBQ) who came over and learned the technique and took it home. Google Texas BBQ in Germany and give it a try.

First, good reaction to Jolly at Black's BBQ which is in the center of Texas. The reality of BBQ though in Texas is that if you go to any city or small town in Texas they have their own BBQ places, and if you asked the people there you'll get the reply that their's is the best. You could literally travel for weeks trying different BBQ from Houston to El Paso, Amarillo to Brownsville and not have the same taste each place. In San Antonio there are at least 50 different BBQ restraunts, some big, some small that have their loyal customers. One thing that I didn't notice on Jolly's platter was chicken which smaller BBQ places have, that comes as a half or quarter. Also, places like Black's make their sausage in large links about a foot long, while smaller places make shorter links about 4 inches. Like I mentioned their are a lot of different BBQ places just in Texas as there are in the entire South of USA.

So, I live about 10 minutes from that Terry Black's. This entire meal in this video with all the meats and sides probably cost close to $300. But that's a lot of food for about 5 people. . You can go there and get a two meat plate and two sides for about $23. A beef rib at $37 a pound will run about $50-55. Brisket by itself will run about $32 a pound, so maybe half a pound would run around $16. I have a feeling their host was paying for most of their meal.

Hey folks, a different viewer from San Antonio here, the United States is big, we have a lot of land here and a relatively low population density (114/square mile in Texas). Most of our beef is locally sourced, and we have the space to grow large cattle. I look forward to seeing you here. Now in San Antonio, we have more barbecue per capita than anywhere in the U.S. Blacks BBQ is a family restaurant that is not in San Antonio, but there are a number that are within 90 miles of San Antonio. I think I went to the New Braunfels Blacks and spent about $40.00 for two people. We did not get that size of plate, though.

At least for the brisket, it's all about the smoking. In Texas, the bark is made with salt and pepper and then 12+ hours of smoke from post oak.
When you come to Texas, you should head to the Terry Black's in Lockhart (about 30-40 minutes south of the Austin one and is the home of the Black Family). I'd be happy to host and show you around that area (it's a small Texas town).

Yeah, I think the problem with European food in general is that y'all have outlawed so many things that it all just comes out as very bland food in relation to what we do here. There is no regulations on doing flavorful food here. As long as you're conducting your business in a sanitary manner, you can put in whatever spices and sweeteners you like. And speaking of spices, the US is fortunate to have a good selection of domestically grown spices and I'm assuming a good arrangement of importing some from abroad. There's basically a selection of 25 basic spices that almost every good chef uses to make their custom foods. But the most common are cummin, cinnamon, paprika, garlic and onion powder, thyme, parsley, basil, salt and pepper.

Corn bread is in fact Corn cake. It's just baked corn meal. It goes well with soups. Ham & Beans, Red Beans & Rice, Gumbo, and Jumbalia. Even goes well with Fried Fish.

You have Hereford cattle in the UK. We have black Angus.... which are significantly larger cattle. Some people have Hereford here too,but they're usually pets. Or milked. The meat from a Hereford isn't something we would consider desirable

By the way... The one thing I didn't see at that BBQ shack... Was smoked fish. We love to hickory smoke fresh caught walleye from Lake Erie. I'm 216... Cleveland, Ohio. That means amazing EVERYTHING from BBQ to veggies. Our population is so mixed with ethnic culture that you literally have Little Italy, Grenich Village, (Slavic) and true BBQ events that would blow your minds. Also... Look up UA-cam videos of Cedar Point, Ohio. I assure you... This is the most amazing amusement park in the world. So many record shattering roller coasters all in a single park. You are invited as my friends to arrive just for Cedar Point alone. Your UA-cam will EXPLODE if you do ANYTHING about Cedar Point... People literally come from around the world to ride these coasters.

Smoked fish isn't bbq and it is certainly not SOUTHERN bbq. I didn't even know OHIO does its own style of BBQ cause you only hear texas, Kansas, Missouri, Mississippi, Georgia, and North Carolina.

Michelin only reviews restaurants in four regions of the US: New York, Illinois, Washington DC, and California. It doesn't matter what restaurants outside those areas are or aren't. Michelin does not review them.
Look to the James Beard Awards and the AAA Five Diamond Award for American equivalents to Michelin stars.

Fun fact: Texas is the only place on the planet to ever have had beef that was cheaper than pork. They had that much cattle.

Bought BBQ is expensive but well worth it. It's sold by the pound so it varies. But at Terry Black's it ranges from $25 - $35/ pound depending on what specifically you get. Sides vary as well. Other BBQ places can be a bit cheaper and others more.
