    In replace of sugar can I use something like stevia

    • @Bigfamilyhomestead
      @Bigfamilyhomestead  5 років тому +6

      Sorry, no. The pectin works with the sugar to make it "solid" up. I'd rather not use the sugar, but even when we have tried reducing the amount, it is to runny.

    I use cardboard for anything messy. My son offered to empty the canner when I'd done ground beef. I told him to put down an old towel for thermal shock. He pulled a pizza box out of the trash. Now I save boxes for this purpose.

    I wanted to make blueberry syrup. I added sugar to taste and put it on the stove, cranked up the heat, brought it to boiling. Boiled until it thickened. Allowed to cool, used some on the pancakes and poured the rest into jars and into the fridge they went. A few days later we wanted pancakes again, guess what? No syrup but jam😲, LOL Therefore, I'm not understanding the need for the pectin.
    Be blessed💜

    Another great video! You may want to check the new lid recommendations, per Ball: For many years, we were told to heat lids to soften the sealing compound. Today, Ball® home economists are saying that heating is optional. Wash the lids and set aside until you are ready to put them on filled jars. Today, Ball® does not include directions for heating lids on the box. If you want to continue to heat lids, it is okay. Keep them in water below boiling. The reason for this is that the gasket is made from a different material and the old seal/gasket needed to be heated in order to seal.

    I just spent the last 2 weeks canning. Cherry jam, cherry syrup, (8 pints) rasberry jam (7 pints( picked them). Peaches in light syrup =6 quarts, 8 pints of peach freezer jam and 2 quarts (ran out of pint jars) coked jam. I just sat and watched this whole video. Clearly I am sick and need a canning intervention. Can on sister, enjoy the ping of each little jar. Ping is a technical term only understood by the most obsessed er uh I mean the most experienced canners.

    • @Bigfamilyhomestead
      @Bigfamilyhomestead  5 років тому +2

      Believe it or not, that's the LOW sugar recipe! It's all about the pectin. For the pectin to "set up" properly, you have to use what they say on the package... we would not use so much if given a choice.

    Is canning really costs effective? If you add utilities, time and materials cost wouldn't it be cheaper to just go purchase the jam? I know home made is better and it's good to know how to do it. I'm just wondering. Peace

    • @blackpackhomesteadchrisand7337
      @blackpackhomesteadchrisand7337 5 років тому +1

      It is and is not cost effective. If you get good jars cheap then it can be. Lids are cheap and seeds are cheap. Or in my case, blueberry plants will produce 7 lbs of blueberries year after year for 40 years max.
