    Recipe:
    Ingredients:
    1 large eggplant
    1 cup (100g) breadcrumbs
    1/3 (50g) sesame seeds
    2 eggs
    Salt
    Pepper
    Vegetable oil for frying
    Directions:
    1. Slice eggplant into 1 cm (0.4-inch) slices. Place them in a bowl and sprinkle them with salt. allow them to sit for 30 minutes to render some of their liquid and bitterness.
    2. After 30 minutes wash eggplant slices from salt and pat dry with a kitchen towel.
    3. In a large bowl/plate place breadcrumbs and sesame seeds. In another bowl beat 2 eggs with pinch salt and pepper.
    4. Heal oil in large skillet over high heat.
    5. Dip eggplant slices in egg, then in crumbs, and place in hot oil. Fry 2 to 3 minutes on each side, or until golden brown. Drain on paper towel.

    Summary
    1) cut+salt+let sit for 30 minute
    2) wash+pat dry
    3) mix 1 cup breadcrumbs+1/3 cup sesame seeds
    4) mix 2 eggs+salt+pepper
    5) dip in egg then in breading
    6) fry

    Saw this recipe 3 hours. Luckily I have all the ingredients and aubergines. I followed one of the comments that says it’s crunchier if you deep the aubergines in the cornflour first before dipping in the egg mixture then the bread crumbs with sesame seeds. In the egg mixture I added garlic powder, ground pepper and salt. It’s so delicious but next time I’ll increase the amount of salt. I only added 1/4 tsp. Next time I’ll increase to half or 1tsp. and add a bit of ground chilli pepper.

    Before dipping in the egg, I first coat the eggplant with cornstarch, then the egg, then then finally the breadcrumbs and I get a better crust. 😉

      I used your method and added a teeny bit of Garlic Powder and Onion Powder. Like you said, the crust was awesome and it came out perfectly with the recipe.

      Before dipping in egg just coat with flour mixed with garlic powder...its awesome😊

    I have always used cornmeal. Will dip in egg first, never tried that & never had precise cooking time that really helps!

    EGGPLANT IS GREAT. THIS RECIPE IS JUST RIGHT . I HAVE ALSO ADDED A SPRINKLE OF PARMESAN CHEESE.

    Thank you for this QUICK and to the point video! I’m missing my grandmother! 😢 She used to make this when I was a little girl. But she used cornmeal. I’m in love with sesame seeds, so I’ll try adding them! 😋💕

      Since I don't have sesame seeds, I'll substitute cornmeal. I think I'll use white pepper instead of black too. Not sure.

    About to make now! Sesame seeds great idea! Tyfs❤😁 oh my goodness they were Super Delicious! Adding sesame seeds gave it a nutty crunch and kind of like a hint faint taste of bacony flavor! Yes this Fried Crispy Eggplant is now on my Favorites List. Tyfs!😋😋😋
    Delicious alone indeed however im a Dipper Queen lol!
    Mixed some Teriyaki Hot Sauce a dab of ketchup and my fav BBQ sauce stir and Vwala a perfect sauce on the side!

    Love this all ready. but i would skin off the dark part, and use cornstarch for some cruch. making this recipe with baked fish ❤. 😊

    This will be my first attempt at cooking with eggplant. Think I might add a touch of garlic powder to the salt and pepper. LOVE sesame seeds and have panko crumbs, so here I go!

    Help! I made these this morning + zuccini the same way. Awesome when immediately cooked. I put a few in my sealed lunchbox with paper towel. By lunch, the crispy was gone! Soggy as. Still looked good, tasted good without the crunch. Are they storeable if only for a couple of hours??

    I cut salt to the dry mix bc of the salt wash beforehand. I add oregano to the dry mix and put parmesan on top afterwards. 10/10

    I don't have breadcrumbs, so I'm just using flour mix w/ cornstarch and add some red pepper flakes for a little bit of heat 🔥.

    I did it l, it was so delicious but way too much crumbs bread and not enough of egg for a very large ≈30cm length. 1 cup is 250 ml in metric & 8 oz meisure.

    Pre-salting is not necessary and baking in the oven (220℃) is healthier and tastes just as good.

      My personal preference for eggplant is Canola. I don't know why but the eggplant tastes better.
