    How do you comb through all the conflicting info when there’s compelling evidence for every opposing argument?
    I’m 45, lean, fit, active, and eat only real food, nothing processed, yet my LDL and apoB is scary high and I am now terrified to eat anything.
    On one side the low carb community presents what seems like solid data and on the other the vegans present what seems like valid evidence. Same with statins. Same with cholesterol.
    I’m wondering if I’m a lean Mass hyper responder or if I fell for click bait. No clue whether my high apoB is going to kill me young or is nothing to worry about.

    I.m reaching the winter of my life now, and I've come to the conclusion that humans should eat only what is available in their local areas. When it is only in season. Humans covered the earth and built impossible structures without a frozen food section or a produce aisle. After 16 yrs eating s.o.s. free veggie diet, I became the opposite of healthy, and went on an all meat diet. It was only going to be 30 days, now 1yr later I'm feeling amazing, and logically ancestorily meat is always in season. It's comical now to think that after thousands of years we're still confused as to what to eat.

    Hi Dr. Gil, I am one of your fan that admires what you do, I have one favor to ask you, this is in regards about brown rice, I am confused whether to eat brown rice or not, is it inflamatory or healthy to be consume? I appreciate and believes in you. Thanks

      Brown rice is very healthful. It contains fiber, minerals, healthy fats, and all the essential amino acids needed by the body, but the amount of lysine is lower in proportion to other amino acids based on our needs, so combining it with legumes (which are high in lysine but lower in methionine and tryptophan) creates a well-balanced protein source. Note that we interviewed Dr. Gil, but he does not own this channel.

    did they mention the rural Asian diet that is almost totally plain white rice....they are far healthier than westerners....I thought high glycemic processed rice like white rice was a problem but the direct evidence from actual populations contradicts this

      Rural Asians have never eaten totally plain white rice. The base of their diet is white rice but not the whole diet. They eat multiple vegetables, tofu and some pork.

      @@annemccarron2281 Not totally white rice. I believe in "The China study" TC Campbell found that about 90% of the diet was white rice. They did have some vegetables and a very limited amount of meat usually on special occasions. At any rate one thing is clear, white rice is not unhealthy as it serves as a staple for large Asian populations and makes up the overwhelming majority of their diet. So the presenter in this video can be said to be inconsistent with the real life data.

      @@tnvol5331 Where in this video does Dr. Carvalho say anything about white rice? Diets are complicated, which is the point of this discussion. You can't look at one food like rice in a vacuum. Would people in China be healthier if they substituted brown rice for white rice? Probably, but there are so many factors, including how the rice is cooked, what it's eaten with, and if it's allowed to retrograde before being eaten (which makes it more healthful). This interview was just meant as an open discussion about food and diets to help people understand some of the complexity, especially in how studies are done and reported. No one diet is going to be right for everyone, and we still have a lot to learn. It's a slow process. Also, thank you for the reference to "The China Study." It's a book worth reading, but many scientists feel that it oversimplifies and misinterprets some things, so it should be considered along with other meta studies and reports.

      @@chefsvillage I have heard the misgivings about the China Study but not from any reputable source we would consider to be an authority in the area of nutrition... such as Professor Willet. I am rejecting the idea that carbs are unhealthy and simply pointed out that carbs (white rice) serve as the food staple for much of the worlds population and does so healthily.

      @@tnvol5331 Well, people can read the book and its critical feedback and make up their own minds about its pros and cons. Also, I think most nutritionists agree that carbs are important nutrients, but they would also probably agree that brown rice is better for most people than white rice. And they would also probably agree that a diet of predominantly white rice is better than a diet of predominantly cookies (also carbs). And a diet of only cookies is better than not eating.

    "Nature Wants Us To Be Fat" by Dr. Richard Johnson is one of the Top books to read. It is a good read, written to be understandable by the average person. It provides an umbrella view covering what is going on with the body with the wester diet. - I am a detail guy and get in the mechanisms of cellular biology, often beyond my understanding. But this book provides the big picture of many things that I have learned on individual topic and did not realize how interconnect they were.

    4 Basic top-level principles - 1. Get some exercise and be consistent 2. Avoid sugar and Fructose specifically as much as possible. 3. Minimize effect of carbohydrates by eating low Glycemic carbs or mitigate other by eating, protein, fats and fiber before eating the high GI carbs and don't overeat carbs. 4. Keep serum salt down by eating less salty foods and lots of water 5 to 8 cups of water (non-sugary liquids and non-alcohol) per day. Information for why to follow these 4 principles is on the net. - Gil Carvalho is a good doctor and YT channel. All evidence bases opinions by Gil.

      Well, that's kind of quite easy to accomplish, isn't it? 😂😂😂 When I was a studying and working single mum of two with hypothyroidism, I just dreamt of coming home and having a big bowl of rice and a cucumber to it, because it was a quick, simple, satisfying and cheap kind of food.
      Now kids grown, not so stressful job, even now I prefer carnivore to Keto mostly because it's simpler, although not anymore as cheap as a bowl if white rice, of course.

    If you believe only eating certain types of food and treating other types of food as poison will change your life you're just as lost as someone who's had 17 cosmetic procedures and thinking one more time under the knife will bring you the happiness you seek.

      Thank you for the comment. I think Dr. Carvalho and most people who study nutrition would agree with you that it's not about individual foods, good or bad. Nutrition is extremely complex and has a lot of variables. You might also be interested in the interview with Drs. Raubenheimer and Simpson where we discuss hormesis.

      what then do you say to those who have had this as an experience, not a belief? A visible, tangible and medically verifiable experience of life being changed. I believe you are going through some level of cognitive dissonance as you seek more insight into nutrition. Good luck!

      @@GreenTeaViewer For people who have serious blocked arteries , this diet made be effective , who knows , relaxing and dilating the arteries maybe . But I only watched part of this video , but in a previous collab claimed this diet could reverse atherosclerosis in 2 to 4 weeks. I call BS - extraordinary claims need extraordinary evidence . Plaque/biofilms etc are incredibly hard to break down and remove even when we have easy access to teeth in our mouth , in the bathroom as established mold , on rocks etc . Evidence shows diet and HIIT workouts can reduce it by a few percent. Imagine tiny ultrasonic robots could enter bloodstream to clean up . If this was THIS EASY we would know by now.
      Again the diet made help existing patients , limit buildup in healthy people .
      Personally I'm against restrictive diets - nuts and oils taste great and oils( fat) adds flavour . So I choose Mediterranean. I can follow it near anywhere and has lots of choice. Again if people want Keto or carnivore , or raw food only , that's their choice. Life is too short and most people don't get to 100 or die of heart attacks . You can increase your chance, only a very very few get to 100 in blue zones.Enjoy life and get to 90 with strength , a clear mind and mobility is quite doable if not unlucky
      Plus for young people , enough evidence to really reduce heart attacks from a multi pronged approach and a wide range of diet choices . also does wonders for us older people .
      One thing most agree on is your can reverse prediabetic of type 2 , and now help for those suffering from obesity .
      Anyway no excess calories on this diet of carbs, leafy greens , fruit and veggies - plus no oils or fats except that in wheat , oats etc probably does protect arteries . Keto diet works also if no carbs and slim weight as body mops up everything for energy to feed muscles
