Traditional Chocolate Oliver Pudding: A Classic British Dessert from the 19th Century

  • The Chocolate Oliver Pudding is believed to be a traditional British dessert, originating in regions like Lincolnshire and Lancashire in the 19th century. It’s a comforting, old-fashioned pudding that showcases the British love for hearty, warming sweets, particularly during colder months.
This pudding follows a self-saucing technique. A basic chocolate sponge batter is covered with a layer of sugar and cocoa and then topped with hot milk or cream before being baked. The magic happens in the oven as the liquid seeps through the batter, creating a soft, fluffy sponge layer on top while forming a thick, rich chocolate sauce underneath. The contrast between the airy sponge and the decadent sauce made it famous during the era, offering an indulgent and satisfying dessert with minimal ingredients.
Historically, chocolate gained popularity in the UK during the 19th century, becoming more accessible to a broader population, especially as cocoa became more affordable. Desserts like this pudding reflected the evolving taste of chocolate in British homes. This dessert could have been a variation of the more traditional steamed puddings and custards that were common in British cooking at the time, evolving to incorporate the growing interest in cocoa-based sweets.
The name “Oliver” might link back to specific families or regions or be tied to local traditions or variations passed down through generations, particularly in rural households where simple, hearty desserts were a staple.

Looks delicious and "rustic", Rik! Seems like a success to me! A little vanilla ice cream over the top of that, and dessert is done!
When I was a kid, back in the 70s, I made someone called Chocolate Cobbler, and the result was a cake that made its own pudding. My brother and I still talk about, more than 50 years later! I recently came across a recipe for that dessert, but in the slow cooker! Perfect for family gatherings.

Fave since childhood, a lid directly on the dish tends to help the sauce staying more saucy. Doesn't matter what it looks like, it's just gonna come out the other end, that chocolatey goodness is what counts

You didn’t fail. My dad’s family came from Lancashire. I had this as a child we just called it chocolate pud.!! It turned out like yours except we got runnier sauce. My mum not from Lancashire didn’t like it looked this way she thought it messy but the taste was gorgeous and my dad loved it. We didn’t get it often. I think if you try to change it to look better it would spoil the texture and taste. I’ve seen this on an American channel and it was the same.
I’ve just remembered my mum stood the dish in water in the oven to cook which stopped it boiling out I think.

Magic chef Rik. I think you have found the correct ingredients for Chocolate Oliver Pudding. Do remember there was a thin crust when cooked on top. My Grandmother made it for me when I was little.
Her Mother's cook who was English. gave a number of lovely English recipes to her. Devonshire splits and Poachers stew are two can recall all the ingredients. Unfortunately the hand written receipe book was lost.
Although you did not make perfect dessert you made a tasty one. 😋😋😋😋😋😋😋

In the States this is often called Brownie Pudding Cake. There's a well-known recipe from the Better Homes and Gardens Cookbook that's been around for decades. The main difference is you pour hot water or coffee over instead of cream, and it uses brown sugar over the top of the batter. But the self-saucing technique is exactly the same! We made it all the time when I was a kid. It's really good when coffee flavored and served hot with a scoop of vanilla ice cream, the sauce poured over.

That’s not a fail, anything you can still eat isn’t a fail.Never saw that in England, only the hot water version in the States.Don’t forget salt in desserts, very important to the overall taste.Bet it would cook better in my convection toaster oven, much less air blowing around. Thanks Rik😊

It wouldn’t win a beauty contest, but can you really call it a failure when it tastes that good? Also, I wonder if using the air fryer instead of a conventional oven might have played a part, even though you tried to cover it with the mesh. I’m definitely going to try making this!

I make a self saucing lemon pudding (similar to a lemon souffle). The secret is to separate the eggs and whisk up the egg white - you fold in the egg white last. The mix is also quite milky. The pudding pan is placed inside a bigger pan of cold water.
Perhaps try again (as this pudding sounds awesome)?

As a chocoholic, it sure doesn't seem a fail to me. And it sure looked like you liked it. I might try it, just as shown, with hot cream, in regular oven. That would have a different heat pattern. More heat just from bottom instead of all around like air fryer.
