Traditional Chocolate Oliver Pudding: A Classic British Dessert from the 19th Century
Вставка
- Опубліковано 11 жов 2024
- The Chocolate Oliver Pudding is believed to be a traditional British dessert, originating in regions like Lincolnshire and Lancashire in the 19th century. It’s a comforting, old-fashioned pudding that showcases the British love for hearty, warming sweets, particularly during colder months.
This pudding follows a self-saucing technique. A basic chocolate sponge batter is covered with a layer of sugar and cocoa and then topped with hot milk or cream before being baked. The magic happens in the oven as the liquid seeps through the batter, creating a soft, fluffy sponge layer on top while forming a thick, rich chocolate sauce underneath. The contrast between the airy sponge and the decadent sauce made it famous during the era, offering an indulgent and satisfying dessert with minimal ingredients.
Historically, chocolate gained popularity in the UK during the 19th century, becoming more accessible to a broader population, especially as cocoa became more affordable. Desserts like this pudding reflected the evolving taste of chocolate in British homes. This dessert could have been a variation of the more traditional steamed puddings and custards that were common in British cooking at the time, evolving to incorporate the growing interest in cocoa-based sweets.
The name “Oliver” might link back to specific families or regions or be tied to local traditions or variations passed down through generations, particularly in rural households where simple, hearty desserts were a staple.

That was not a failure. That looks awesome, and as a chocoholic myself I would devour the whole pan.
Yes it had a great chocolate flavour. Thank you. Best, Rik
Me too. 😋
Indeed, I live on my own and the entire pyrex dish would have been left with some crumbs of evidence that there once was a cake in there - I would say about 45 mins to hide the evidence in my belly!
Loving life! Good for you! ♥️
@@NikkisNoshyes no less wash-up either when eating from the cooking dish! 😂simply add cream to personal taste😋😋😋.
You are absolutely my favorite and funniest CHEF, thank you!!!
Thank you. Appreciated. Best, Rik
Plain speaking Yorkshireman! real chef of youtube...no fakery or BS with the Rikmeister. Onwards and upwards Sir and fair play for showing your mistakes. Nobody is perfect
Always, mate you know it - no BS on here. Thank you. Best, Rik
HI Rik, most chefs would have remade until they get it right, as most hate it when something goes wrong, but you are the most honest chef on UA-cam. Your comments throughout are hilarious.
Thank you. Nothing hidden here and no second takes - that's my rule. Everyone needs to know how to cook, so no coverups! Best, Rik
@@lesliewelch6551 great comment! Each word true. 🙌🏼♥️.
it's an old fashion Lava Cake !!
Agreed! That doesn't have much lava. Thank you. Best, Rik
That's just like my aunties when I was a kid. Bring it on Rik. Not a failure at all.😊
Thank you. Best, Rik
Thanks again Rik. Your comments throughout cracked me up. Thanks for your honesty and humour!
Thank you. Best, Rik
Rik, we all make mistakes, it's how we learn. I made banana cake last week, misread the recipe, and put 2 teaspoons of salt instead of baking powder. It tasted like the sea 😂. I'm grateful that you show your fails, it proves you're a genuine guy. Bless you, and thank you, as always
Thank you. Best, Rik
Oh Rik I would still eat it and even though iv not heard of this pudding before I have seen one made with boiling water on the top and that did make a lovely sauce , love you for trying the original and not a fail at all just a lesson learned , thank you for sharing , Amanda xx
Thank you. You are the best, so kind. Best, Rik
It’s good to see that even professionals don’t always get it right. It’s al good that Rik is honest. Respect.
Thank you. Nowt hidden on this channel. Best, Rik
I would definitely eat it Rik so it's not a fail for me and you haven't seen some of my fails 😂😂
Definitely one for my Riks Recipes cookbook, thank you Rik 👏🏻👏🏻👏🏻👏🏻👏🏻
Sometimes the fails taste better than the successes
Hope you make it better. Thank you. Best, Rik
If ever a cake deserved the name 'Lava cake' then this is it for sure! Might look a mess, but my tummy wouldn't really care as long as it tastes good.
Tastes great! Thank you. Best, Rik
Looks delicious and "rustic", Rik! Seems like a success to me! A little vanilla ice cream over the top of that, and dessert is done!
When I was a kid, back in the 70s, I made someone called Chocolate Cobbler, and the result was a cake that made its own pudding. My brother and I still talk about, more than 50 years later! I recently came across a recipe for that dessert, but in the slow cooker! Perfect for family gatherings.
Thanks for sharing with us! 💜
Ha ha ha - you are the best - Rustic is the word I needed for this Ugly duckling. Thank you. Best, Rik
Rik....you are an EXCELLENT cook! And I personally don't care how something "looks" as a chocolate lover myself, it looks pretty AMAZING to me! 😋 Be well sir‼️🙏❤
Thank you. Best, Rik
Fave since childhood, a lid directly on the dish tends to help the sauce staying more saucy. Doesn't matter what it looks like, it's just gonna come out the other end, that chocolatey goodness is what counts
Thank you. Best, Rik
You didn’t fail. My dad’s family came from Lancashire. I had this as a child we just called it chocolate pud.!! It turned out like yours except we got runnier sauce. My mum not from Lancashire didn’t like it looked this way she thought it messy but the taste was gorgeous and my dad loved it. We didn’t get it often. I think if you try to change it to look better it would spoil the texture and taste. I’ve seen this on an American channel and it was the same.
I’ve just remembered my mum stood the dish in water in the oven to cook which stopped it boiling out I think.
Great memories right there. Thank you. Best, Rik
Nothing wrong with it! But thanks for having an honest channel chef x
Thank you. Always! Best, Rik
❤It's been ages since I have had a pudding cake. Taste is more important than looks!
Tastes great - looks terrible. Thank you. Best, Rik
The important thing is the taste! ❤❤
Thank you. Best, Rik
This made my heart leap🤣. You should have seen the Quinoa crepes/pancakes I tried yesterday! Brutal! I have been making regular crepes on a regularbasis for past 50 years, but this recipe more than tested my culinary skills! That is one ingredient that will never cross my threashold again! As we speak I have the treacle cake in the oven!💕🇨🇦
Ha ha ha - did you just leave them to settle in the pan - if moved too early what a mess. Thank you. Best, Rik
Magic chef Rik. I think you have found the correct ingredients for Chocolate Oliver Pudding. Do remember there was a thin crust when cooked on top. My Grandmother made it for me when I was little.
Her Mother's cook who was English. gave a number of lovely English recipes to her. Devonshire splits and Poachers stew are two can recall all the ingredients. Unfortunately the hand written receipe book was lost.
Although you did not make perfect dessert you made a tasty one. 😋😋😋😋😋😋😋
Truly you are amazing chef who does not give up and shares the good and mishaps so we all can learn from each other.
You are my hero. 👏🧑🍳🕺
My spouse enjoys eating what I copied, recreated from your utube channel.
The plates are cleaned and requests for more. Happy days. Happy meals. Happy learning. Thank you.
Wow! Stunned, appreciated. Thank you. Best, Rik
One man's 'failure' is this girl's 'hand me a spoon'.
👍🤣
Love that! Thank you. Best, Rik
Yes!❤❤❤❤
That was not a failure in my eyes. It may come out beautifully in a conventional oven. I will give it a try and get back on the results.
Thank you. Use water over the top. Best, Rik
I think it’s awesome that you showed the world what you considered a “fail”. Most chefs probably would not show the video, so good on you. That being said, I think that was probably a great tasting cake even though you called it a fail.
Yes the taste was good the overall cake and what should have happened not good! Thank you. Best, Rik
I remember telling you about my neighbour ( Mrs Briers ) who taught me to cook when I was about 7 .She always told me nothing was ever a failure just adaptations. My Jam didn't work out & became a pie filling & it was wonderful. I think she would have called that a chocolate volcano & served it with vannila ice cream..It tasted fab ,so I don't see any problem. Ugly fruit may have a bad sounding name but they to are delicious...
What a great idea! Thank you. Yes Ugly fruit. Best, Rik
Oh Rik, you made me chuckle, nothings a failure if it tastes good, just pour on some custard and say nowt, none would be the wiser 🤫x
Yes pour quite a lot on here. Thank you. Best, Rik
Or vanilla ice cream or a dollop of whip cream. Perfect.
I can't get over the fact that you prepare all these meals day in and day out, while I istruggle to get up in the morning to make a cuppa tea.

You are so funny!! We always like what you do!!!

Yes, I love your humor, Rik! And also how you constantly remind people you can change stuff up in a recipe. You want to do it another way, go for it! I loved your comment "There, now we've turned this ugly pudding into a ... less ugly pudding"! Lol
This looks utterly delicious! I’m definitely giving it a try. 👍🏻
Hope you enjoy. Hope it works for you. Thank you. Best, Rik
I bet it's still delicious. Some of the sauce boiled over, so that's where some of it went. I've never heard of chocolate George. Thanks for sharing, Rik.
Thank you. The old days baking dishes were quite a lot deeper than I can get hold of. Best, Rik
@@BackyardChef that's true. My dishes aren't very deep either.
Another recipe that just demonstrates your natural personality. It still looks better than most of my attempts most of which I wouldn't eat! Well done Rik so many would not upload anything with an excuse.

"We don't make mistakes, we have happy accidents" (Bob Ross)
It's a really nice recipe👍 and I'm glad I'm not alone with my occasional kitchen accidents.
This episode is handed down by the world-famous cellist Casals:
Even at the age of 93, Casals practiced the cello for four to five hours a day. To the question "Why?" he once answered: "I have the impression that I am making progress."
That's how I see my cooking.
Fantastic! Thank you. Best, Rik
If you hadn't declared it as a failure, Rik, I would have been none the wiser and thought looks alright to me! 😊
You are too kind. Thank you. Best, Rik
Thought you said it was going to be a fail Rik - You would be paying top money for that in any City centre eating place. - Looks lovely

No! It looks delicious to me! I would just add a little single cream to it when serving. Yummy! ❤❤

I want to hide mine with custard. Thank you. Best, Rik
Hey from British Columbia Canada!
Hey! All the very best, Rik
That looks gorgeous! 🏴🇬🇧
Too kind. Thank you. Best, Rik
Since I am ignorant and don’t know how it is supposed to be, I would serve it with whipped cream or with vanilla ice cream. Sometimes food is lovely to look at and sometimes it isn’t, but as long as it tastes good it really doesn’t matter.
I would ask my ex if he wanted custard, cream or ice cream, and he’s say “yes please” lol.
I make the version of this with water and can confirm the addition of cream and/or ice-cream does it proud. I don't always have them to hand and it's still pretty good without.
Yes a big dollop. Thank you. Best, Rik
Thank you. Best, Rik
Water works very well. Thank you. Best, Rik
It does work with water.
It is nice to see you experimenting. I must say I wasn’t sure about the cream but hey! What’s not to like about chocolate pudding/cake??
Personally I would have eaten the lot - yum!!
Exactly!! Water is the way to go. Thank you. Best, Rik
My "failures" still taste great.lol.this one would too, I'm sure. Thanks Rik

I'm from Lancashire and I've never heard of Chocolate Oliver ... If my Nan was still alive I'd ask her if she remembers or knows about these old recipes ...
Aye the old ones are disappearing. Best, Rik
Bless you your such a beautiful cook so well explaind xx❤
Thank you. Best, Rik
In the States this is often called Brownie Pudding Cake. There's a well-known recipe from the Better Homes and Gardens Cookbook that's been around for decades. The main difference is you pour hot water or coffee over instead of cream, and it uses brown sugar over the top of the batter. But the self-saucing technique is exactly the same! We made it all the time when I was a kid. It's really good when coffee flavored and served hot with a scoop of vanilla ice cream, the sauce poured over.
Thank you. Best, Rik
There was question on 'The Chase' on the TV this evening. The question was 'What is a Chocolate Oliver'. Someone answered 'a pudding'. That was deemed to be incorrect and the host said that the correct answer was a biscuit. You pay your money and take your choice, I suppose.
Ha ha ha - no biscuit. Thank you. Best, Rik
I love your show...especially all your old recipes from the 19th century. I am from India.
Thank you. Best, Rik
I think the main reason for the failure is the use of hot dairy; my Chocolate Pudding Cake and Lemon Pudding Cake recipes call for boiling water. And they never failed me.
Exactly! That's the modern way. They never fail. No worries I loved trying this old hand written recipe. Thank you. Best, Rik
Perfect Looks are not always the rule for success. That looks so delicious…🎉🎉🎉

Be nice with ice-cream I should think. Made me laugh you calling it an ugly pudding. Thanks Rik you can't win em all and you can remedy it for next time you make it. Way to go. Love your honesty. I felt a bit sorry for the pudding it tried it's best lol
Ha ha ha. Covered in custard hidden would be a good idea. Thank you. Best, Rik
I will try this. It doesnt matter how it looks, taste is more important ❤
Thank you. Best, Rik
That’s not a fail, anything you can still eat isn’t a fail.Never saw that in England, only the hot water version in the States.Don’t forget salt in desserts, very important to the overall taste.Bet it would cook better in my convection toaster oven, much less air blowing around. Thanks Rik😊
Thank you. Best, Rik
It wouldn’t win a beauty contest, but can you really call it a failure when it tastes that good? Also, I wonder if using the air fryer instead of a conventional oven might have played a part, even though you tried to cover it with the mesh. I’m definitely going to try making this!
Good luck! Thank you. Best, Rik
In the States we call this a “magic cake” or “magic pudding cake” or “lava cake”.
Oh thanks for sharing. Best, Rik
Yes, the 1972 Betty Crocker fat paperback includes it, only it's all brown sugar, finely mixed with cocoa, to make the sauce. That's always my husband's job!
That is easily the best looking "fail" I've ever seen!
Wow, you are so kind. Thank you. Best, Rik
This is similar to the magic chocolate pudding I tried once, that didn't turn out as expected 😄

@@BackyardChef You’re welcome❤️🐝🤗
Your right it doesn't look great ,but it does taste fine so no probs, I do make a self saucing lemon sponge and i do use the old oven its not as fierce, as the hysap. it usually turns out great, ill do one this Sunday now you have reminded me, tks Rik.
Nice one. Thank you. Best, Rik
It still looks delicious. Will you try it again with the water sometime, please. 😁
Yes I will. I was following a hand written recipe - the modern way is with water. Thank you. Best, Rik
I make a self saucing lemon pudding (similar to a lemon souffle). The secret is to separate the eggs and whisk up the egg white - you fold in the egg white last. The mix is also quite milky. The pudding pan is placed inside a bigger pan of cold water.
Perhaps try again (as this pudding sounds awesome)?
Yes indeed! I was following a handwritten recipe for this one. I actually still enjoyed trying to create it. As you know, I love the old recipes. Thank you. Best, Rik
I make mine with water, brown sugar and cocoa powder for the sauce and it’s perfection. Light as a feather. Mind, I’d make a right mess of that too lol xxx

As a chocoholic, it sure doesn't seem a fail to me. And it sure looked like you liked it. I might try it, just as shown, with hot cream, in regular oven. That would have a different heat pattern. More heat just from bottom instead of all around like air fryer.
