Back in the 1900s, my grandma & her mother were the cooks in a logging camp in Montana. Even though it was just the two of them--they had, as Grandma put it, "a girl to wash up and a man to haul water & wood & chop it"--the camp was known throughout not just Montana but Idaho, Wyoming, Washington, & North Dakota for the food, and men came from all around to work there because as anyone knows, a man works a full day on his stomach (women too, but not in the logging camps back then!). This fact caused the camp managers problems on at least one occasion when they decided to cut the pies into five pieces instead of four in order to save money. Well. The camp didn't save money, though, because the loggers went on strike! That strike was soon resolved. Grandma always got a kick out of that, and she told that story to a Montana history magazine. After she married her logger & Grandpa went off to the Great War in 1919, Grandma made what she called "Chicken & Doughboys." That's what we called her delicious, herb-seasoned chicken & dumplings even after her death in 1987. I was lucky enough to inherit her beautiful Warner Ware cast iron pans, but I lost all but one of them, the griddle, ten years later when the cabin I built burned down. You can bet that the griddle cooks better than the rest of my cast iron combined. Grandma was one-quarter First-Peoples, and when I was living off the grid in the woods, I often heard, or rather felt, her spirit speaking through my body to me. These experiences were always holy to me, never ghostly or fearful. I always felt blessed. p.s. love the "CatchUp With Jesus" T!

Talli Faye. I have made chicken and dumplings many times. But being raised in the north, my dumplings were biscuit dough dropped into boiling stew and covered until they rise. Then uncover and brown in the oven. We ate it a lot because it is delicious! I need to make the southern version of dumplings. I know that is amazing. Thank you for all you do!

Most people now days either make drop or refrigerated biscuit dumplings cut up in 1/4’s !! I’ve had both but prefer the good old fashion rolled ones , with stringy chicken in them ! This could be the first time many of your viewers have ever seen the flat dumplings at all much less how to make them ! They just don’t realize how fast and easy they are to make, and to me taste much better !! My mouth is watering. I used to live between Crockett & Alto in a very small community called Weches, population 23 (at that time? Everyone lived about 3 miles off the highway in the Piney Woods. The sky was so clear, with no lights, that you thought you could touch touch them. I've been to that lake, too. Don't remember the grill. That was way back in 1969. 😅

My mama always used self rising flour and lard and seasoned well with salt and lot's of black pepper, I have never had anyone else can be as delicious as hers.She would roll them with a Tupperware glass because she didn't have a rolling pin,and she always used whole milk and if she didn't have lard she used shortening.And it had the most delicious creamy pot licker not no watery broth.

The recipe that I make is just like yours except that I use the chicken fat (cooled) from the boiled chicken instead of shortening. That was the way that my Great Grammaw use to make them. I have made her recipe for 55 years now. I have used shortening in them also (when I didn’t want to wait for the fatty broth that I removed, to cool down.) Your way is just as delicious!!! I make my Great Grammaw’s recipe mostly because I feel close to her when I make them…and also my Great Aunt, and my beloved Aunt Catherine 🥰 They all grew up in a Coal Mining Camp in Southern Indiana. Great Grammaw cooked her Chicken and Dumplins for many many people in that camp, besides delivering most of the babies that were born there. She smoked a pipe and carried a Pearl handled pistol in her pocket most of the time, to keep the men in her family in line! 🤣 They were big drinkers and when they would get home drunk, they would get to fighting. My dad and uncle told me that one time she pulled that pistol from her pocket and shot a hole in the ceiling, and they all ran for their lives! Anyway…According to many people, she made the best Chicken-n-Dumplins in Sullivan County☺️.And I KNOW that yours is just as good!!! Guess what I am making tomorrow?!! Hi . I live in lititz PA. Right smack in the middle of PA dutch country. Here we call that chicken pot pie. Chicken and dumplings is different . No matter what it's called it's so delicious and one of my favorite comfort foods too! It's also good made with a beef chuck roast.

Im up north and my guy is from the south, I never had chicken and dumpling soup until he made it, it is similar to yours but he uses flour and puts some broth and bouillon instead of milk, it is delicious and I'm sure yours is too, mmm yum😃😋
We call this chicken pot pie. By we, I mean Pennsylvania Dutch. It is my family’s favorite. They ask for it for Christmas dinner and as often as I will make it. Our dumplings have baking powder in them and are like balls. But, call it whatever you like, it is delicious. Thanks.

Miss Talli, there was a ‘hole-in-the-wall’ diner in South Miss. they served the best chix & dumplin’s. This was 30-40 yrs ago. Anyway, the ‘gravy’ was real yellow cuz they used eggs in it. Have you ever seen/heard of that? If so, how in the hecc did they do it? A slurry of egg-yolks, you think? Like i said, this was years ago; old-fashioned cooks like yourself. Hi . I live in lititz PA. Right smack in the middle of PA dutch country. Here we call that chicken pot pie. Chicken and dumplings is different . No matter what it's called it's so delicious and one of my favorite comfort foods too! It's also good made with a beef chuck roast.

@@DinkTank369 The saying is actually potlicker, In Southern cooking, potlicker is a nutritious liquid left over after cooking greens or smoked meats. It can be eaten on its own, or used as a base for soups, gravies, and dressings.
Im up north and my guy is from the south, I never had chicken and dumpling soup until he made it, it is similar to yours but he uses flour and puts some broth and bouillon instead of milk, it is delicious and I'm sure yours is too, mmm yum😃😋

We call this chicken pot pie. By we, I mean Pennsylvania Dutch. It is my family’s favorite. They ask for it for Christmas dinner and as often as I will make it. Our dumplings have baking powder in them and are like balls. But, call it whatever you like, it is delicious. Thanks.

Miss Talli, there was a ‘hole-in-the-wall’ diner in South Miss. they served the best chix & dumplin’s. This was 30-40 yrs ago. Anyway, the ‘gravy’ was real yellow cuz they used eggs in it. Have you ever seen/heard of that? If so, how in the hecc did they do it? A slurry of egg-yolks, you think? Like i said, this was years ago; old-fashioned cooks like yourself. Probably their g-g-g grandmas recipe. I see yr Subbies are increasing; so I know you don’t have much time these days. So if you can’t answer, no worries, OK? Congrats on almost 40k Subbies! My grandmother always called this pot pie because they're rolled out 🤔🤷 My great aunt made a moister dough dropping them into the boiling broth by teaspoon. It's just all yummy no matter what. 👍🥰😋🥰

@@thomastommy1192 I just used what broth I had from boiling my chicken… added water to it to fill enough for my dumplings… seasoned it with extra chicken bouillon, salt and pepper 😊😊😊
You don't sound dumb. That's a legitimate question for folks who aren't used to this type of cooking. The only thing that would have been dumb would have been to walk away pretending like you knew what it was and didn't ask. You sounded courageous and wise because you wanted to learn.
This is a Southern dish, right? Miss Brenda (Gantt) makes hers like this. Here in the North we're more used to drop-biscuits as the dumplings.
