This pizza vendor has an amazing mobile pizza van setup. My only tweak is that I wish he could clean off the pizza cutter after every use. The box to take it in is cool but looks like it would add a decent amount of cost to your order. I wonder how much you could improve margins with a smaller cheaper one

1) they don't have cow-buffalo mozzarella, the authentic cheese used in the birthplace of pizza. 2) they don't have Extra Virgin oil. 3) no idea about their tomato puree. No idea if they keep the Italian tradition or add ketchup and pineapple on pizza.
Don't leave your toppings out at room temp, they need to be in a commercial food service cooler that has a flip top design and can keep the ingredients cool while still being accessible. Even if you put the containers back in the cooler after you get what you need, the toppings still won't have sufficient time to cool between orders and will in only an hour or so grow bacteria and cause your customers to become sick off your food. I get the runs too many times because restaurants are making these mistakes and being too lazy
The rule is 4 hrs if I am not mistaken at room temp. His toppings will be done by then and then he does a restock. Busier pizza places also do not use refrigeration because everything goes so quickly

Nice food truck, I've been a chef for 25yrs and I would sell the resturant today to have a food truck, Sorry to nitpick but your charging around. £8.50 sterling for a pizza, the actual volume of toppings you get isn't that much for the price, the main criticism. Is the pizza cutter, your only using the one and your cutting pizza with meat toppings, if I was a veggie and I saw that I wouldn't be happy, perhaps you could get 2 one for meat and one for vegetarian. Like imwaid it's nitpicking

Pro tip - oil the pizza before you put the sauce on. It stops the sauce from soaking into the dough.
