I honestly think it was just a matter of convenience. The fey are notorious for making deals with mortals that benefit themselves more than those they deal with. Since Demona and Macbeth made the pact and became immortal, why wouldn't the sisters want to use two essentially indestructible pawns?
I must admit, part of me is a little bit sad that they turned out to be villains/antagonists. I really thought they were going to be really useful allies with Goliath earlier on. Oh well, you could make the argument that they’re just doing their job And stopping magic from entering their homeland, but still.

Doesn't Macbeth mean "Beldam", because "Bedlam" means trouble or chaos while Beldam is another word for Hag
I don’t think they ever really explained why the sisters took an interest in Macbeth and Demona. Nor, sadly, has the feud between them been resolved.
