It is supposed to be 1 can whole kernel. 1 can cream of corn. 1 egg an 1 box jiffy mix may take 2. This is the simple receipe for this. But us true southern cooks add a few more ingredient. We even make elotes mexican cornbread for chili.
A true southerner would make homemade cornbread not jiffy 😒😒 2 cups flour, 1 1/4 cup cornmeal, 3 eggs, almost 2 cups of milk, 1/2 cup sugar, a teaspoon baking powder, pinch of salt and a stick of melted butter.😏

Without the cheese slices : most southern cooks call that baked corn bread. The halfnhalf gives it a richer flavor. I've seen them use creamed corn also. That's pretty normal cornbread. She's got a fetish for cheese and Duke's mayo. 😊

Momma this is the recipe I use but I add 1 egg per small box of Jiffy mix for extra richness. Sometimes, I'll add 1/2 of shredded cheddar cheese to the mix (not on top).

Your momma doesn’t like to use too many utensils and likes to minimise the washing up. Mix everything in the baking dish and then bake it. She did the same when she mixed a cake in a Bundt cake tin and baked it.
