    Ingredients for 70-75 dumplings
    the dough:
    ☑ 3 cups all purpose flour
    ☑ 1/4 tsp salt
    ☑ 1 cup and 2 tbs cold water
    the filling:
    ☑ 3 cups ground pork (500g)
    ☑ 2.5 cups cabbage - finely minced
    ☑ 2 garlic cloves - finely minced
    ☑ 1 shallot - finely minced
    ☑ 4 sliced of ginger - finely minced
    ☑ 5 scallions
    ☑ 2 tsp salt
    ☑ 4 tbs sesame oil
    ☑ 2 tbs soy sauce
    ☑ 3 tbs rice vinegar
    the cornstarch slurry (aka the skirt):
    ☑ 1 tbs cornstarch
    ☑ 1 tbs flour
    ☑ 1 pinch of salt
    ☑ 1/4 cup water (60 ml)
    dipping sauce:
    ☑ 1 tsp light soy
    ☑ 1 tsp rice vinegar
    ☑ 1 tsp chili oil
    ☑ garnish with green onions and sesame
    Boiled:
    - Bring water to a boil
    - Put dumplings in
    - Cook until dumplings float
    Steamed:
    - Steam for 10 minutes
    Pan Fried (with skirt):
    - Heat oil in a pan
    - Put dumplings in, close together
    - Cook for 2-3 mins - medium heat
    - Add cornstarch slurry, make sure it’s evenly spread
    - Lower heat, cover and cook for 6 mins (until the water has evaporated)
    - Uncover the pan and let the “skirt” turn golden and crispy
    Pan Fried (without skirt):
    - Heat oil in a pan
    - Put dumplings in
    - Cook for 2-3 mins
    - Add water in the pan, covering 1/3 of dumplings surface
    - Cover and cook for 5-7 mins, until water has evaporated
    - Uncover and cook for an additional 1-2 mins for final browning
