Those are pretty standard wrestling moves to stay safe from being pinned, taught in all Olympic wrestling styles as well as Catch wrestling. Why call it jiu-jitsu?

I've gotta a white belt question here, hopefully not too dumb. Is there a good way to make your opponent break their traditional side control gable grips to work into this technique? I'm assuming to a neck pinch type.

I’m assuming that you meant like “regular” side control which I also assume you’ve found is an easier side control to escape at this point lol. No need to bait into harder positions unless it’s the idea of allowing people mount (in grappling) to counter or escape easier which is still the opposite logic type of example.
