커피시트에 치즈 크림을 가득 올린 티라미수 케이크를 만들었어요~
시트를 구워 가운데를 원형으로 파내고 묽은 크림을 채워 먹기전 무스띠를 제거하면 크림이 퐁신하게 흐르도록 만들어 봤어요~
저는 쉽게 구할 수 있는 크림치즈를 사용해 크림을 만들었는데 마스카포네치즈로 만들면 더 고소해서 티라미수 느낌이 더 날 것 같아요~
크림의 농도에 따라 흘러내리는 느낌이 달라지는데 생각 보다 묽게 만들어야 주르륵 흐르더라구요~
간단하지만 재미있는 케이크인 것 같아요~^^

▶틀 사이즈 Mold size : 15cm
▶재료
달걀 3개
설탕 75g
꿀 10g
바닐라익스트랙 3g
무염버터 25g
우유 40g
인스턴트 커피가루 3g
박력분 90g
크림치즈 150g
설탕 40g
30% 정도 휘핑한 생크림 250g
코코아파우더
▶레시피
1. 뜨거운 물이 담긴 냄비 위에 달걀이 담긴 볼을 올리고 설탕, 꿀, 바닐라익스트랙을 넣고 온도가 40도 정도가 될 때까지 저으며 섞는다.
2. 핸드믹서로 풍성한 아이보리색의 거품이 될 때까지 휘핑하고 박력분를 체 쳐 넣고 섞는다.
3. 녹인 무염버터, 우유, 인스턴트 커피 가루를 섞어 둔(온도 50~60도) 볼에 반죽의 조금을 덜어 넣고 섞은 뒤 본반죽에 넣고 섞는다.
4. 15cm 틀에 붓고 170도 예열된 오븐에서 30분 정도 굽고 식힌 뒤 밑면을 잘라내고 가운데를 원형커터로 파낸다.
5. 크림치즈에 설탕을 넣고 부드럽게 풀고 30% 정도 묽게 휘핑한 생크림을 넣고 살짝 섞는다.
6. 시트에 무스띠를 두르고 크림을 올린 뒤 코코아파우더를 뿌린다.

75g Sugar
10g Honey
3g Vanilla extract
25g Unsalted butter
40g Milk
3g Instant coffee powder
90g Cake flour
150g Cream cheese
40g Sugar
250g Whipped heavy cream (whipped up 30%)
Cocoa powder

It's just plain acetate or pvc sheet. You can find these in art supply stores
