I’ve dried some wild oregano before by just hanging it in bunches, been using it all summer and love it. I’m no expert on seed saving though, I just let things go to seed and then dry them. Will have to do some more research in the years to come

Love the first recipe, in Portugal que have a recipe called "pataniscas" the originals are made with codfish, and wheat flour, onions and parseley but vegetarians made a new one with all kind of vegetables, very similar to yours, very good 😁 best wishes

You use normal pickling ingredients..water, vinegar,sugar, salt.. cut courgette (1 large) in cm thick strips after you removed pips.. Pack it in jar with clove garlic , 1small chili and 1tsp black mustard seeds. After pickling fluid has cooked..pour over courgettes..cover it. Seal. Ready in 2 weeks.
I would also be interested in putting in an egg or three to the fritters.... Wonder if that would add just a little 'pouf' to the fritters. All of these recipes sound great!
Hi, i’m from Indonesia, e we have this kind of fries here. But a lil bit different with the veggies we put to the batter. If you’re a vegan i guess you should try our recipe: (how we cook is just the same way like yours) you need to put chopped cabbage, granted/chopped carrot, garlic, chopped leek, add flour, salt n paper, some water, (add one eggs if you want), mix well and fry it. We call it ‘gorengan’ wich means ‘fries’. It taste really delicious. Or you can dip some ‘tempe’ to that butter and if it already covered just fry it. And we gonna call it ‘tempe goreng’ 😍👍🏻
Nice recipe, try adding a little paprika or chopped fresh chillie into the fritter mix and serve with yogurt & mint dip, also if you have a glut of them, why not preserve in olive oil or make a pickle? or create a courgette soup?

We have something that looks like your recipe, is a typical recipe and we call it pataniscas. Is made with codfish.
Do you think adding eggs to the first two recipes would make them better or worse? I am thinking that adding some animal protein is a good idea. I want to try the fritter recipe with flour and eggs. As you must know, in Italy this time of year there are LOTS of fresh zucchini at a very low price, even organic zucchini. I am not growing zucchini this year in my small garden so I must buy it.
Here in the Azores, I have eaten the flour and egg mixture. It was great! Harder to find the pure vegetarian ingredients here...altho' it is getting easier. I just go traditional with the local ingredients. Zucchini is so great and versatile that way. Now, I want to give the tarte a try!

You need to add eggs to the zucchini pie otherwise it wouldn’t have much body to it and seems to be a waste of the pie crust. Turn it into more of a quiche.

The chickpea flour has lots of protein, but a batter from regular flour and egg would also work.
