  • In our current generation, pork asado is always associated as a Chinese dish. Maybe because it is one of the popular choices used as a filling for siopao or steam buns. This pork asado is cooked using the whole pork rump or shoulder. The taste is sweet and savory.
    In the Philippines, particularly in Pampanga, pork asado uses the whole pork as well but the ingredients used for cooking are totally different. It is simmered in crushed tomatoes, soy sauce, kalamansi juice and spices. As a result, the taste is a little bit sour and savory. Old folks cooked this pork asado dish perfectly. Thus, the name “OLD STYLE PORK ASADO”.
    OLD STYLE PORK ASADO is not an everyday dish. Perhaps the reason is a huge chunk of whole pork is always used. A small family of four can not finish eating this dish for weeks! But every time there is a celebration like weddings, birthdays, graduation or fiesta, this dish is always served.
    The advantages of serving this dish are as follows: it can be cooked days ahead of the celebration, it can feed quite a number of guests, the taste is so special, and the dish because of its sour taste can complement well with other served dishes that are sweet and savory.

    OLD STYLE PORK ASADO
    Ingredients
    4 lbs. pork shoulder
    ½ lb. chicken liver
    Marinate the pork and chicken liver in salt and ground black pepper
    1-796 mL can crushed or chopped tomatoes
    2 C water
    ¼ C soy sauce
    Juice of 1 lemon or 6 pcs. kalamansi
    2 t dried oregano
    ½ C grated cheese
    ½ head garlic, peeled and finely chopped
    2 medium white onions, peeled and finely chopped
    Freshly ground black pepper
    Salt to taste
    1 t Magic Sarap
    Cooking oil
