/how to make
0. Lay the paper on the circular frame. Wash and drain the strawberries and slice thinly (5-8mm).
1. Mix the yolks and whites well, mix all the powders, and sift through a sieve once.
2. Heat water in a small bowl, put eggs and sugar in a slightly larger bowl, and set the temperature of the eggs to 35-40 degrees.
3. Add honey and whip with a hand mixer. When the color changes to white, when the dough is dropped, it clumps for a while and then settles to finish.
4. Lightly sprinkle sifted flour on the whipped dough and mix well with a spatula while floating from bottom to top.
5. Mix to a minimum as the foam settles quickly.
6. Mix melted butter and milk, scoop out the dough little by little and mix well, then sprinkle on the dough and mix well.
7. Pour the Genoise dough into a round mold lined with parchment paper. (I used round frame #2.)
8. Bake in an oven preheated to 200 degrees at 170 degrees for 30 minutes.
9. Poke the baked dough with a skewer and if it doesn't come off, it's done.
10. Remove the steam by tapping once, then remove from the mold and remove the paper.
11. Cool, seal and marinate overnight.
12. Prepare 3 sheets by cutting the aged dough into 1.5cm thick with a stick.
13. Add water and sugar and heat to dissolve the sugar to make syrup. Add Kirsch to make sugar syrup.
14. Add mascarpone cheese, sugar, and kirk to whipped cream and whip with a hand mixer.
15. Place Genoise in the center of the wheel, first moisten the syrup and then apply whipped cream.
16. Put the sliced strawberries on top, apply whipped cream again, put the whipped cream on the second cake sheet, and repeat whipped cream - strawberry - whipped cream.
17. Lay the third cake sheet, spread a thin layer of whipped cream and arrange all sides.
18. Put a lot of whipped cream on the cake sheet and spread it horizontally on a larger area than the cake, and then attach it to the side with a spatula.
19. Trim the side with a scraper at a right angle and cut the cream from the top by pushing it inward.
20. Decorate the top of the whipped cream with icing and strawberries.
I used the No. 2 round mold and filled it about 2/3 and baked it.
If you use the round No. 1 frame, you can raise the cake higher.
