I think that is referencing either a Guardians ride replacing the "Universe of Energy" at Epcot or a Guardian ride replacing Tower of Terror at California Adventure, and Pirates of the Caribbean was a ride first before it was a movie franchise. So Peter is saying that he is going to take over another Disney ride like the Guardian's franchise did in the past

The "You best start believing in tired old cannons, mate cause you're in one" line is also a reference to Barbosa in the first Pirate's film. He tells the story of the curse to Elizabeth, she says "I don't believe in ghost stories", sees the undead crew right after and Barbosa slowly reveals his undead form in the moonlight while saying "You best start believing in ghost stories, miss Turner. You're in one."

I belive the part about the his father being a planet also refers to the fact that in the comicbooks ego wasnt his father and peter wasn't a demi-god, so jack is saying that its weird that they did that for the MCU
