I used my meat chopper to chop up strawberries this spring when making freezer jam.

I can't believe I have everything to make this recipe. I am diabetic, so I must make one change. The chips. I can use low carb tortillas and cut them in strips. They will absorb all that delicious looking sauce. Can't eat the rice, but my grocery store makes good guacamole. Thanks for another lazy meal that even diabetics can enjoy!
I am a diabetic to. Try brown rice it way more carb friendly.
So I checked out carbs on 1 cup cooked brown rice which is 49, white rice which is 53, and wild rice which is 32. I try to keep my carbs below 20 for the day, so for me, best to stay away. Everyone has their own carb limit based on A1C and other factors.

Hi Catherine, I make the enchilada casserole last night and my entire family loved it. That is Saying a lot because I live in the Philippines and my wife is Filipino and usually only eats Filipino food. She had two servings of the enchiladas. I find excuses to use red enchilada sauce and Rotel. Your casserole looks delicious. I prepared your French onion beef with rice recipe this evening. I adapted your skillet recipe for an Instant Pot and used strips of cubed steak and it was delicious. Thank you for the idea and the recipe.

I make something simular to this but I put some nacho cheese sauce in it along with Mexican blend shredded cheese.I also add the rotel diced tomatoes.

Oh I want to add, I will be using a plant-based "meat." I stopped eating meat 2 years ago, and I have been learning to make a lot of my favorite recipes with plant-based meats and they are all delicious. Some of the products are better than others, and I have been trying them over time and seeing which ones work for me. Just wanted to let you know that you have vegetarian fans watching your channel too! Thanks again! :D
I like how the tortilla chips mimics frying the fresh corn or flour tortillas which can get pretty messy.

The best red enchilada sauce is done with the red pepper pods you find in produce, if you ever do those you'll never use canned sauce again! It's a bit of work and time but oh so worth it!

I'm loving that meat chopper myself, but when u said it's great to shred the chicken in the crockpot, now I KNOW I have to have one.. 😂 I always con my husband into cooking the hamburger or sausage bc I hate breaking it up with my hands lol when I show him this awesome kitchen tool, he will make sure I get one 😂😂
