As a former fast food worker I am always impressed by videos like these. The care, dedication and overall cleanliness is amazing. It’s a far cry from the burger joint I used to slave for. Seems like America could stand to learn some things about food prep and sanitation from other countries.

Is there any risk to a soft cooked omelet or does it reach the temps necessary to kill off any potential baddies eggs can carry?
The chance of getting salmonella from eating undercooked/raw egg is EXTREMELY low in countries like Japan or Korea, almost nonexistent. They are very strict with inspecting and cleaning eggs. Mixing a raw egg with hot rice is a very common meal in Japan. I'm not sure where you live, but I live in the US. The risk is higher yes, but it's still pretty low. I have eaten raw eggs or undercooked eggs all my life and I've been fine so far. It's a risk you take, just like eating rare steak. Whether or not you think it's worth it is up to you. Also I see no difference in eating an egg with a runny yolk like over easy or sunny side up and these omelettes being wet inside. If you've eaten eggs over easy or sunny side up you'll be fine eating omelettes like this.

I have to tell you that when you showed the yellow and red bell peppers, you called them paprika and is incorrect. Paprika is a spice, those were vegetables (bell peppers).
