Alternatively, if someone's worried they might burn themselves when flipping the dumplings out of the pan, what I do is lay paper towels out on a plate and slide all the dumplings onto it, letting the paper towel absorb the oil, then grab another plate to flip all the dumplings over preserving the latice structure. It makes it a lot easier to transfer it between two plates, and the paper towel helps absorb some excess oil and liquid.

I like to follow Sohla's (from Bon Appetit) suggestion to use a mix of vinegar and water to make the slurry. It gives the crispy skirt a nice flavor. Marion's pleats come out much neater than mine!
Thanks, I'd forgotten about Sohla's vinegar tip. I did add a pinch salt to the slurry though. I used a small cast iron pan and it was perfect. They froze really well and I didnt defrost before cooking them. Cant wait to make again...like 100s of them!!!!

This is called 冰花锅贴 or 煎饺 (pan fried dumplings) , our Chinese traditional family or street food. You did a good job 👍
The Japanese word gyoza is just like the typical northern Chinese accent of saying jiaozi
@@aaronfang6965 no it's cooked the same. Gyoza and ramen is considered Chinese food in Japan considering most of this is served by original Chinese immigrants that went to Japan. Gyoza is the Japanese pronunciation of Chinese gao-zi
I love how you're explaining everything. We love Gyoza so much that my teenies and I tried it once. It didn't went well so we just decided to buy a frozen Gyoza but it's really different from home made. Definitely this I will try, looks so easy and i love the idea of putting some flour water on it to add crunchiness😊 Thank you so much for sharing this. Love it!🥰

So I tried this recipe and things to note;
-The only supermarket I could find with any kind of dumpling wrappers was Coles, and those are square wonton wrappers, which did just fine taste and texture wise, although the colour was a bit different.
-Getting square ones means you have to come up with your own way of encasing the filling. Furthermore, holy crap they are fiddly and Marion makes it look way easier than it actually is!
-The crispy pancake doesn't always crisp up so make sure you don't pour too much on the pan and make sure it is evenly distributed
-you can switch out the pork for chicken mince and add one or two cooked frozen prawns to each dumpling (don't defrost otherwise they will become tough) for chicken and prawn dumplings that suit the marinade just as well.
-altogether these dumplings are amazing, but then what would you expect from this chick? She is such a great cook!
I made a batch of these and cant wait to make them again. I found rather large wrappers at an HMart. So good! Especially that lacy skirt......Big crowd pleaser! Thanks so much!

Marion, I love how those dumplings looked when you finished pinching them and lined them up on the tray. So beautiful and cute! As far as dipping sauce, I like to do half soy sauce, half Chinese black vinegar, my homemade chile oil (chile flakes, minced garlic, and oil that's cooked on the stove until aromatic), and a ton of sliced scallions tossed in. Yum!

If you've got good filling you don't need to drown out the flavour in soy
well you can't just yet when the gyoza is sealed, wait til you bite a hole through the filling and soak up the sauce with a second dip.
You know nothing about good food if you have to drown your food in sauce.
