Ingredients
2 cups pureed watermelon
1/4 cup fresh lemon juice
2 cups white sugar
6 tbsp 2 packages powdered pectin (labeled as "low sugar" or "no sugar needed")
Instructions
Put pureed watermelon, lemon juice and sugar in a pot. Bring to a rolling boil, then reduce the heat to a simmer.
Add the pectin and whisk it with a whisk or a fork immediately, so it dissolves without clumping.
Bring the watermelon jam to a boil again, then reduce heat to simmer and simmer, stirring every minute, for 20 minutes.
Pour the watermelon jar into a mason jar.
This watermelon jam will set completely once it's cooled.
This watermelon jam can be canned, or you can simply store it in a refrigerator (it will stay fresh in a refrigerator for up to 1 month).

Pasteurization doesn’t significantly reduce vitamins. The heat and time used in making jam is much higher and longer than pasteurization. Pasteurization is essentially bringing something to a high enough temperature that pathogens and harmful enzymes are destroyed. Many of these don’t even require as high a temperature as boiling.
Thank you for the video. Regarding lemon juice--if you're adding it to the jam, and then boiling it in the canner, doesn't that pasteurize the juice anyway?
You said this and I thought “🤦🏻♀️”. I’m so used to thinking about this difference when putting lemon in my water I never over thought it about canning. I think the 2 are similar processes from what I have read. Thank you for commenting this! Why don’t you make picked rinds or candied watermelon rind
When canning what is the head space in the jars?
1/4 to 1/2 an inch with jams.
I never have luck with powder pectin … it literally never gels for me .. I usually just add in unripe fruit for the pectin … sometimes I’ve had luck with the liquid pectin but never the powdered … don’t know what I’m doing wrong … I follow the instructions 🤷🏻♀️ .. funny though the unripe fruit seems to a better job
Sometimes I add an extra pack of the powdered pectin if it seems to not gel enough. If the unripened fruit works well for you then that’s the way to go!

If you like watermelon jolly ranchers-Yes! My children enjoy it. I prefer my Fall jam recipe I have on here.
A look at the finished product would have been nice. How much does it thicken???

It tastes like a watermelon jolly rancher. The last minute or two is the finished project. Thickens to a normal jam consistency.

Your jam looks like you use more than 2 cups of pureed watermelon, mine doesnt look like that. Did you double the recipe?

Don’t wipe the water barely tip the jars … wiping can cause a false seal … great video .. btw new standards you don’t have to boil jars anymore as long as you’re water bathing for at least 10 min - new research
I’ve heard that about boiling the jars but I can’t seem to get past it in my head- feels wrong not to boil them 😂. Thank you for your comment!

Question for you b/c most jams/jellies usually add the pectin b4 the sugar; is there a difference in the whole end result? I do not know; hence the question. Are there diff. results from your method? NOT BASHING THIS VIDEO AT ALL....I REALLY DO NOT KNOW. Have a GREAT rest of your night.
Yes. I found a recipe a long time ago that I follow for this. It worked so I keep doing it. It did go firm but it did seem to take longer than I’d expect with most jams. I don’t usually fix it if it isn’t broke- however, yes you should add your pectin first according to jam rules and I probably should have done it that way so that I didn’t confuse anyone. I hope that answers questions! And I’m glad your jam savvy enough to know that’s not normal 🙂. My families FAVORITE jam (without pectin) is the next video that will come out. “Fall Spice”.
