Speaking from experience down here in the Southern U.S., switching from beer to whiskey at the end of the night is commonplace, especially if you work in some dive bars like I have. Folks be tryin to play catch-up, they want to feel drunker than they are, so you start to see a lot more shots and stronger liquor when the clock gets past midnight.
Rye is a similar but different than regular whiskey or bourbon (long story), boils down to personal taste by and large .. as for the switching I've always kinda taken it as poetic license and sarcastic/exaggerated and macho/hero/brag kind of thing.... In short, it may not be 100% true but it rhymed lol!

Rye whiskey is probably known by you as Canadian whiskey. Here in Canada we either call it simply “whiskey” or “rye”.
Generally it goes like this.

🇮🇪 Irish Whiskey
Usually Bourbon is strictly from Kentucky

rye whiskey means rye mash is 51% of the mix. Canadian whiskey is usually rye whiskey. it's less in American Whiskey
