    Mam i love ur recipes, but if I can't use geletin what can I replace geletin with and in what quantity...for most of ur recipes.

      You can try with agar agar or any other vegan "gelatin", according to the instructions. I have lots of gelatin free recipes too. :)

    In an apple Charlotte .. there is a French word for the custard to eat with it … it could be a savory or sweet sauce, depending on the dish but for the Charlotte obviously it’s sweet. Does anybody recall the French name of that egg custard sauce and not hollandaise not béarnaise….

    Beautiful cake I have questions when u pour the choc glaze on top of cake what is the temperature of the glaze and for decorations on top what kind of white choc u use can I use candy melt for deco thank you and well explained

      Thank you! :) The glaze was lukewarm when I poured it onto frozen Bavarian cream, I didn't measure the temperature. Yes, you can use candy melts for decorating!

    Hi Tereza, how long the cake has to stay in the freezer before thel glaze?

      Hello, keep it until it is frozen solid.

      @@pastrymaestra hi Tereza sorry but I have two more questions. Should I put the cake back in the freezer or refrigerator after the icing? And how long before do I have to keep it out before I can eat it?

      @@alessandror.4238 I put it in the freezer for about 10-15 minutes until the glaze sets, and then I remove the mold and acetate strip and put the cake in the fridge until it thaws, it takes about half to 1 hour, depending on the size. 😊
