Hello, you need it because it would be too soft without the gelatin. You can use regular milk chocolate ganache made with double quantity of chocolate than the cream, just leave it at room temperature until it becomes pipeable. :)
Instead tuile you can use crushed wafer cookies or crushed ice cream cone. You can use ferrero ball on the top, I hope it won't be too heavy though! :)
