Thank you Jill for another great recipe. My dear hubby still eats some meat, in addition to all the WFPB food I cook. One of the things he occasionally purchases is jerky type products. I will make this and I hope it will satisfy his cravings so he will not eat the carcinogenic processed meat products.

Believe it or not, I only recently found out what jerky is 😅 We call it biltong in South Africa.
I used to make biltong before I stopped eating meat. Same idea as jerky really, but it’s always air dried. I’m pretty sure it’s possible to make this without a commercial dehydrator. If you have a desk fan & a large box, grease proof paper & your oven shelves, it’s easy enough to McGyver it. Easier in warmer conditions than cool weather though.

Beautiful, looking forward to making this over our Family Day weekend coming up! I prefer savoury over sweet, so I'm going to try using chia seeds to swap out the dates, and add chipotle, smoked paprika, onion and garlic powder to make it spicy. 😋

Looks good. Would something similar work for mushroom chips, not jerky? Similar to a cracker or potato chip. Maybe pre-fry the mushrooms, covered, to release the water, which can be used to make the sauce. The dates might not be needed if it holds together. It would be interesting to try different types of mushrooms.
I’m confused. “Pre-frying” suggests oil/fat (not used on this channel)…

Oil and water don’t mix…

then the water can’t escape.
I can’t imagine this being a crisp cracker.
Even the driest mushroom is tough and chewy unless burnt to a crisp…
and that wouldn’t be very filling.
Your idea of crispy chips is interesting… maybe if the mixture was spread extra thin on a very good non-stick griddle and finished off in an oven or air fryer? Still, I don’t think it would make enough chips for the time and effort required.

@@soniajacobs3038 The idea is to "fry" the mushrooms on a dry (no-oil) skillet, covered, to cook the mushrooms and release the water. Then blend with the flavorings to make a paste, which can be spread thin and dried or baked, like making crackers. I've made mushroom "chips" before -- sliced mushrooms marinaded and baked. This would be a variation on that theme. The question is, would it hold together? I presume that the dates are what make the jerky hold together, but I'm looking for something that isn't sweet and sticky.

I've heard you're not supposed to eat raw mushrooms. Does this remove the toxins that are in raw mushrooms?
White button mushrooms should be eaten cooked, not raw. According to Dr Michael Greger.
Processing the mushrooms and dehydrating breaks down the chitin that your body doesn't digest. Even just dehydrating yields the same benefits as cooking 😊
It is cooked, just at a low temperature and slowly.
