- Chicken Tikka masala is one of those things that never seems to taste right when you make it yourself. It's not just ingredients that make a great curry but the process that goes into it that makes it taste as it should. This recipe will get your first perfected curry on the plate.

For my first time ever making Indian cuisine, I made this tonight for my fiancee and I. It is absolutely delicious!! So many levels of flavor, I'm a new home chef and Joshua your channel is gift from the cooking gods thank you sir!
I just made this today and it was absolutely amazing. My mom is battling terminal cancer and she has a tough time with food generally. Nothing tastes right, and restaurant food is out of the question for health/safety reasons. She loves Indian food so I wanted to make her some. She loved this so much, as did the rest of us. I'm notorious for making really terrible food but when I came across this recipe I thought it was worth a shot given how simple you make everything for us. Most days are just rough, and it brightened our day. I also used your Naan recipe, and tweaked one of them to add in some kashkaval cheese on request, and they were also a hit (I've never baked or kneeded or anything so you can imagine how surprised we all were). I just wanted to let you know this literally made a difference in someone's (rough) life. Ps I tried the macarons and wouldnt you know it, I screwed up the macronage and the sizing so they look horrabad but still taste so good!

@Heidi Ivy Make everything the same, use thighs, and then grill and toss back into sauce for extra flavour. Also, check out jeera papad, fry and use the chip to scoop and eat.

So, He isnt going to see this but I hope you guys find this nice. I made this for my grandparents who I havent seen in ages (a few years at most). They have never had any kind of cooking that I do and I had this recipe printed out in a binder and I pulled it out for them. The best tikka masala you're going to be getting from anyone is going to come from this guy. Making your own tikka sauce is an amazing move and makes so much flavor that much better. 10/10 would recommend this recipe who wants some bomb food. Thank you Josh!

My mother makes this with similar spices with some changes.
1. For dairy free version, blend some cashews and water and add the same amount
2. Take some coriander seeds (1 1/2 tsp) and toast in butter till fragrant. Toss that in with your rice for an extra kick
3. Use green chillies (3) for that extra kick in the tikka masala.
Can i use fresh turmeric instead? I don't usually use turmeric powder and kinda wasteful since I'm gonna use it only once and never will

So happy to see this dish out there for everyone to make!! Thank you so much Joshua! As an Indian who lived in the US for a while, I had a couple of small tips to add - Red onions work better (more flavour!), and the basmati is best cooked on an open pan! In India, it’s what we do. 3 and 1/2 cups (or 4 cups) water for every cup of basmati, and top off with some vegetable/canola oil, and simply open cook! It’s perfectly done in 10-12 minutes, saves you the trouble of an instant pot !

Just do 1:1 rice:water ratio, boil it for 2 minutes, remove from heat and put a lid on. Wait for a few minutes until the water is gone and the rice is perfectly cooked. The oil is useless.

I made this for my parents so they could have a date night and they LOVED it! Def try this out it's so worth it!
I made this recipe and it was amazing, I had to adapt since I didn't have all the ingredients BUT the end product is great and sooo easy to make. Definitely would recommend it. The amount of spice was just right for me

Okay first things first, being an Indian i had to weigh in on this. My first reaction to your attempt on making the dish is that it was epic and relatively close to the authentic one.The trick to Indian food is to not complicate things. Keep things simple. Use fresh tomatoes instead of cans, chicken on the bone and not boneless, use whole spices instead of store bought powdered ones.
Personal tip: Add garam masala always at the end accompanied by dried Fenugreek leaves for orgasmic flavors. Note: Fenugreek leaves bends the dish towards Butter chicken and butter chicken harms nobody.

He is correct, it takes practice to get rice right. It's a common food here, but sometimes people still mess it up. It requires RiceAwareness.
I died when he said that! My mom is Filipino and older than Josh and she messes it up all the time. Whenever I visit she complains, “I must be the only Filipino who can’t cook rice.”
Tomás Wilson most asian don’t even know that you can cook rice in a pot lol. We just chuck them in a rice cooker, it’s cheap, it’s easy,it make rice perfectly, guaranteed a nice result and it can be use to steam foods too. I don’t understand why people in the west buy a 60$ machine with the only purpose is to roll and cut pasta dough which could be done by hand, but then refused to buy a 10$ rice cooker.

you really need to be cooking onions for a lot longer than that for good curries (and probs use two or even 3 onions). I worked at a good Indian restaurant for a while and the base of all our curries was a load of ginger garlic paste cooked off until starting to go golden, then 20-40kg of onion cooked for 2 hours or so, until theyre real brown. For home quantities I recommend cooking on low heat with lid on until starting to turn jammy, then heat up and lid off, constant stirring

I was thinking this. Every real-ass, broken grammar Indian recipe I've ever read starts off with "saute those fucking onions and ginger and garlic paste." Once you blend together all the ingredients you're not going to be able to get the proper saute on your herbal vegetables and the ginger-garlic flavor will be overpowering.

Actually very true. Almost every gravy has the basic same steps. Onions should be reduced to around half their original quantity. And also using fresh tomatoes is recommended. That adds more flavour to the gravy.

Nice recipe. But here are some adjustments for the rice:
-Use star anise (1 small piece)
-Cinnamon stick
-Cloves
-When the rice starts steaming, add oil (Not a lot) and turn it on low

I think the rice with a little bit of salt and oil for seasoning it's perfect. The star of the show shoudln't be the rice in this type of dish in my oppinion.

This looks great! I'd just reduce the amount of tomato puree WAY DOWN and increase the amount of spices though. Western versions of tikka masala tend to have too much of tomato in them. Makes it too acidic. Increasing the spices will lend more complex flavors to the dish.
Also, it's called chicken tikka masala because the chicken pieces are skewered and then roasted or grilled separately before being added to the sauce. That is essential.
Thirdly, no authentic chicken tikka masala has canola oil in it. Mustard oil is an essential ingredient in this.
Agreed - followed the recipe and it was shallow in flavor but close. Kicked up the spices, reduced the cream, and puree and damn it was good
@@michaels9632 also, you have to let it cook for a while. After you put in the cream, let it cook for at least 10-15 minutes so that it can develop rich, complex flavors.

I just made this today and it was delicious! (It also tasted just like how my local Indian restaurant does it, only spicier). I did add some vegetables to it though, to make it a bit healthier (some thinly sliced butternut squash, a chopped red bell pepper, and half a small bag of "riced" cauliflower - I added them in with the onions). ❤
[I also don't have a working blender, so it did come out a bit chunkier, but it was still good!]

Mr. Hamster Before reverting to these “absolutes” like “always wash your rice!” you need to understand that there absolutely ARE times that you don’t want to wash the rice, and you want to keep that starch on there. Risotto is a good example. Also for Spanish style rice, I often will not wash it because I like a more “sticky” final product, where others might not. There really are no absolutes in cooking.
@Mr. Hamster 2 reasons. 1, cleanliness. Rice sits for ages in a warehouse and cleaning it gets rid of any dust or whatever. Cleaner taste for your rice afterwards. 2) Gets rid of the extra starch, which makes your rice cook through better as individual grains rather than sticking together as a clumpy, mushy sad mess.

I made this recipe last night and it was so delicious. I didn't have Kashmiri chili so I used regular chili powder. Also, I like a little sweetness in my Tikka, so I added about a tablespoon of honey to the onion mixture and a little bit more right before the end of the sauté.
Alright, this curry means a lot to me. My mom makes it occasionally and I would claim to be a master at what it should taste like. I am apprehensive to make it any other way however this curry that you made is absolutely wonderful. It’s the same if not even better than what I eat. Guys you gotta try this. Keep on cooking food man, you’ve got some talent.

basmati and jasmin rice needs rinsing, however longgrain, sticky rice and sushi rice do not need rinsing. you wash away most of the flavor there.

Naan is actually Iranian in origin made in a Tandoor Oven and for Indians it's largely a restaurant food Idk how this bread went well-known for and as Indian food. In India it's just a fancy Roti.

Love this video! for future reference, you can blitz the onion with the tomato and it will form a thick base and also let you cook the water off more easily since you don't have to apply heat to break the cell walls, reducing your cook time by a bit. :)
