I’m a baker for Sobeys and I’ve been working with those walk in ovens for 25 years now. Still do to this day, and this is odd to say the least. Those doors won’t close securely on their own. They need to be pushed in as they quite heavy. There is also a safety release from the inside for these exact situations. Obviously I can’t speak on the specifics for that particular oven but from the picture of it it seemed rather similar to the ones I operate. I feel like we don’t have the full story yet.

Surely, such ovens should be designed with at least three emergency features, including an alarm system, a backup mechanism to open the door, and a button to shut off the heat.

Lots of commercial bakeries have them. All are large enough to walk into and become trapped. They bake hundreds of loaves at a time so you can imagine the size of the ovens. Some are as big as a room in a house. It's unfortunate that this young woman lost her life.

I've worked with these ovens for almost 15 years-multiple different models, from Hobarts, Baxters, and LBC, and you can adjust the time and temperature of your bake before you put the racks in and just hit the START button (once the rack(s) is in and the door is firmly shut). Walk in ovens do NOT start automatically when the door is pushed closed. Most retail bakeries keep the ovens on, even when there are no racks with product in the oven, until the bake is done for the day. The start/stop button needs to be manually pushed for rotation to start, but the temperature stays on until manually turned off. Having said that, all the ovens I've worked with have had safety release buttons to open the door from the inside. If you aren't trained properly and don't know it exists? This incident is very disturbing.
Safety release buttons can fail, they have been known to fail with walk in freezers. This incident is so disturbing and I can't even imagine what she went through and what her family is going through now.

Our walk in freezer like to slide of the tracks sometimes and becomes impossible to open. Thankfully it has never happened to me while on the inside only when trying to go in it.

It's an oven designed to fit tall racks you can put multiple trays on. They use them in bakeries all the time. When the racks are taken out, someone can step inside them to clean them. We aren't talking about huge walk in freezer or refrigerator size ovens.
