My thoughts in planning meatless meals include theme-based meals: Asian stir fry Mondays with tofu/veg, Taco Tuesdays (options are endless) with beans, pasta Wednesday with lots of veg or beans (sometimes veggie crumbles), curry Thursdays with chickpeas, Veg Pizza Fridays, Traditional casseroles (plant-based) or veggie burgers Saturday, Brunch and then slow cooker soup on Sundays. It helps so much with planning. We like leftovers for lunches too.
Hi Mindy, you have just seriously inspired me to cook a wonderful lentil soup, while I had almost no fresh ingredients left in my refrigerator and all my proteins are in the freezer! Onion, carrots and celery along with some leftover potatoes, lentils, seasonings and a bay leaf just made my lunch so so good, no meat needed. Thank you 😊
In the summer I love to make faux crab cakes with shredded zucchini seasoned with Old Bay and pan fried in a little oil. There are several ways to make the patties depending on if you wish to use egg or not. I usually do without egg so it is easier to control the moisture.

There used to be a show on called "dinner and a movie" and every week, the channel would show a classic movie and the hosts would make dinner on the commercial breaks that was somehow related or themed according to whatever movie they were showing. Anyway...I say that to say that "beans and cornbread" was the theme song for that show, and any time I hear those words, I still sing it in my head. LOL!
I have been adding in more meatless meals as well, it really does help the budget significantly. As for Bay Leaves, you add them to soups and stocks to add in another level of flavor. It is a very slight tea like, very light (very light) minty aroma to things, somewhere between a spearmint and menthol. They also have a bit of a peppery taste, which helps soups and stews that are heavy, be not so heavy.

I finally mastered how to make tofu delicious. I freeze the brick straight from the grocery store, then thaw it and press out the water. I crumble the brick on an air fryer liner and air fry it with some seasoning until it’s very crispy and dry. It is so versatile. I like it with teriyaki sauce and rice or mix it with salsa and put it in tortillas. I thought I would never like tofu, but as a mostly vegetarian, it was time I finally learned. $1.65 per brick is so much better than the price of other meat replacements!
@@kimberlyglenister8119 It was hack I read somewhere that freezing it changes the texture. It said if you think you don’t like tofu, try freezing it, crumbling it, and making it crispy. It crumbles into tiny pieces so if you’re wanting cubes or bigger pieces, it won’t hold its shape after freezing it.
Our favorite meatless meal is veggie spaghetti. Making the pasta from zucchini and squash then making the sauce from diced tomatoes, mushrooms, and a few other veggies.
I just made a meal with Spinach and Cheese Ravioli from the freezer section of my grocery store, I added in fresh Broccoli, a can of Spaghetti Sauce, a can of Diced Tomatos, one of Black Beans and 2 soft Laughing Cow Cheeses and seasonings. Healthy, made 5- 6 portions so I will have leftovers, and was not expensive. Being creative and flexible in the foods we eat is important.
Tuesday I made a soup. It only had potatoes, onions, garlic, tomatoes, jalapeño and cilantro. For the seasoning use chicken flavor and tomatoes flavor bouillon cubes. After cooked I put cheese on top and I cooked rice on the side. I also make beans during the weekend and eat them with rice or make refried bean tostadas or make beans tacos
We are vegetarian at my house. Great video. I love making vegetarian spaghetti but i make lentil “meat” balls with them. They are so hearty and provide excellent flavor. We also love vegetarian chili! I slow cook it and add liquid smoke to give it a more Smokey flavor.
We've been doing Meatless Mondays for several months and our favorite so far has been falafel in a pita with tomatoes, red onion, cucumber and tzatziki. Trader Joe's has the best mix you just add water to and you can fry or bake them. Fast, cheap and yummy.
Bay leaves actually leave a subtle bitterness, sometimes describes as being a menthol, minty or piney note, that keeps stews and soups from tasting so heavy. I don't often use it because I have a sensitivity to it that makes it taste strong. I have the same issue with cumin and tarragon.
Our favorite meatless meal right now is this grain, oven roasted veggie and chickpea bowl. We add a creamy sauce and some feta cheese on top 😋. We eat it at least once a week. It’s delicious!
Meatless shepherds pie using canned pintos or lentils in place of meat with s tomato tomato/salsa and mashed potato top is our go to meatless and cheap.
I want to make the first recipe that you made in the crockpot in this video. I do have questions. After putting in the bay leaves and the parmesan rindes in the crockpot do you leave them in there or do I need to take them out before serving it? I do not usually cook with bay leaves or parmesan rindes so I do not know how that works. Also, can I use canned green beans instead of frozen?
You will want to remove the bay leaves and rines before serving. I think you could use can beans but maybe add them later in the cooking time, as they are already cooked.
Yes, I usually remove the bay leaves and the rinds, though sometimes the parmesan rinds get soft enough I can just stir them into the rest of the soup. It is just cheese, it's not wax or packaging of any kind. Yes, I almost used canned green beans in this one myself.
I love the suggestion to freeze and add Parmesan rinds to soups! If you are using the slow cooker you could easily sub dried beans and extra liquid to save money. One of our favorites is crockpot vegetarian chili (leave out the beef and add extra black/kidney beans) served with tortilla chips. We also really love creamy spicy black bean soup with tortilla chips, I’ve served it to meat lovers who swore it tasted like nachos lol
YES to cottage cheese; the only caution is that it is usually very high in sodium so I'm careful to use less salt when adding to a recipe. My favorite use for cottage cheese is Cookie and Kate's Best Vegetable Lasagna. Full of veggies.
One...salt isn't bad...sugar/carbs are! You can live about 3 days without salt before you die...you can never eat a single carbohydrate again and live 50,60,70 etc years! But check out good culture brand cottage cheese if you're looking for a clean product! Tastes the best and it's 5 ingredients! No gross fillers, chemicals, or added sugars!
Sometimes I make a lentil sloppy joe filling and use that in a baked potato. My husband isn't a big lentils fan so i don't get to make it as often as like. My vegetarian friend makes these amazing brocolli fritters. We usually eat them on a bun like a burger. So good!
And you can throw plain cottage cheese in the blender too if it's texture issues! My middle kiddo has sensory processing disorder...I put SOOOOOO much in my vitamix! Lol
Vegetable stir fry with rice and pad Thai with vegetables and peanut butter sauce are no meat favorites in my home. Great way to use up fresh produce or use frozen vegetables if fresh aren't available.
I have been watching a lot of different channels and I have been listening to everyone talking about greek yogurt but this is the first time l am able to see someone actually using greek yogurt (the fage brand). As l am Greek and I am watching you from Greece l am surprised you can find it in the us.

I look on Pinterest for ideas on cooking with beans and I don't call it ' Meatless Monday ' anything. That can sometimes make my boys skeptical! One of our favorite recipes is a Rosemary Lemon White Bean soup.

I put black bean soup on the menu quite often. We love it! It’s rarely vegetarian though because there’s usually a scrap of taco meat or some shredded chicken that needs used up.
I use cottage cheese to make whipped dips. Whipped cottage cheese with green yogurt makes an amazing buffalo dip, french onion, and garlic herb. I found the recipes on Pinterest.

We really loved the Enchilada bake you made recently. I used Impossible "beef" and it was delicious!
For a more healthy and wholefoods option You can also sub with tofu, tempeh, mushrooms you can alter the texture by shredding them, slicing dicing, crumbling etc and oyster mushroom resemble chicken alot), jackfruit or banana blossom
Have you tried the Thrive riced cauliflower? I have one but haven't tried it yet. Love crockpot meals . I tend to do a lot of them with working ft 40-50 hours a week and being a caregiver my other hours. I have a 15 bean soup going with ground beef now.

We like a cheese tortellini for our meatless meal but my family really likes meat. I can get away with just a little meat for flavoring in some casseroles (1/2 a lb) and then they are satisfied.

I started eating meatless meal to cut back on sodium and calories, and now I look forward to meatless meals. I will never give up a grilled hamburger or bacon wrap fillet, I just don't eat meat everyday. However, fresh produce sure isn't cheap - but cheaper than meat-just complaining 😉
Hubby isn't a big fan of meatless meals but keep trying different things. Pinto beans, fried potatoes and cornbread happens frequently. Veggie soup or tomato soup with grilled cheese is another.
@SMM I really laughed when you said don’t use flavored yogurt in a casserole by mistake haha… I think it’s helpful when you discuss protein grams because idt it’s clear to everybody how that works.
@Kat V thank you for that explanation. I buy HUGE containers of Bay Leaves because use them in so much of my cooking. I can't use chili's because they are a nightshade but I'm going to try lemongrass.
I can't say exactly what the flavor of a bay leaf is, but I do know that it totally makes chicken broth better. I have learned, however, that I don't like Turkish bay leaves. 😬
Bay leaves from the Laurel family add a depth of flavor. If you dont like it ,omit it or take out sooner than you would otherwise A staple in Latin food, Middle Eastern food , may be an acquired taste... We love it
Our favourite meatless meal is spaghetti Bolognese made with minced mushroom taste exactly like meat version!!!!!!! I also make my own sauce from few ripe tomatoes veggie stock powder herbs salt and pepper that's it
@@SeeMindyMom If you can find it, and you have the money, the Aldi store brand of potato soup is wonderful. Comes in a family size pouch for about $3.25; you just add water and cook it for about 20 minutes. If you have some leftover vegetables that belong in potato soup (carrots, celery, onions), and need to use them up, you can boil them for five + mins. first and toss them into the soup at the beginning. Or toss the soup mix into the premeasured water that you have cooked the veggies in. You may need to add a little more water than the diretions call for. Our store was clearing out the pouches of soups a week or so ago, and I tried to snag some. All that was left were the broccoli cheddar cheese soup bags, and I already had some of those.
Well, I’m really talking about eating less meat, not going full plant based. But I think eating plant-based, that depends on how you utilize that lifestyle. If you use a lot of special products that are “meat” or “dairy” substitutes, then yes. But if you eat fruits/veggies/grains/nuts/oils, then I think it is a very economical way of eating.
You know what, it can be just as expensive to eat an all plant based diet as it is eat meat. Have you really seenthe prices of vegetables? Over the moon expensive ... insane.
I do not find that to be true in my area. I just restocked over 20lbs of produce from Whole Foods (the most expensive grocery store on my area) and it was less than $40. This included: zucchini, bell peppers, green beans, cucumbers, 2 kinds of apples, bananas, raspberries, blueberries, lemons, grapes…🤷♀️

I like lentils, myself. My family are kind of so-so on them, but I think they're good for mixing with ground meat when we want to cut back.

We have a lot of meat free days in our house. Last night we had sweet potato and black bean tacos. I added some crispy tofu and a few lentils in mine.
We have been loving shakshuka and we have it over rice with some naan and it's delicious and so affordable!

I would not think so. Slow cooking and steam cooking are two different things.

I have! And also the riced broccoli. I keep them in my emergency meals bin, but I still use them from time to time for lunches.

We like a cheese tortellini for our meatless meal but my family really likes meat. I can get away with just a little meat for flavoring in some casseroles (1/2 a lb) and then they are satisfied.

I started eating meatless meal to cut back on sodium and calories, and now I look forward to meatless meals. I will never give up a grilled hamburger or bacon wrap fillet, I just don't eat meat everyday. However, fresh produce sure isn't cheap - but cheaper than meat-just complaining 😉
Hubby isn't a big fan of meatless meals but keep trying different things.
Pinto beans, fried potatoes and cornbread happens frequently. Veggie soup or tomato soup with grilled cheese is another.

@SMM I really laughed when you said don’t use flavored yogurt in a casserole by mistake haha… I think it’s helpful when you discuss protein grams because idt it’s clear to everybody how that works.

I don't know either BUT no bay leaf makes a horrible soup, stew etc.
@Kat V thank you for that explanation. I buy HUGE containers of Bay Leaves because use them in so much of my cooking. I can't use chili's because they are a nightshade but I'm going to try lemongrass.
We are having beans tonight, with diced ham added (leftover in freezer from holidays).

I can't say exactly what the flavor of a bay leaf is, but I do know that it totally makes chicken broth better. I have learned, however, that I don't like Turkish bay leaves. 😬
Bay leaves from the Laurel family add a depth of flavor. If you dont like it ,omit it or take out sooner than you would otherwise A staple in Latin food, Middle Eastern food , may be an acquired taste... We love it

Our favourite meatless meal is spaghetti Bolognese made with minced mushroom taste exactly like meat version!!!!!!! I also make my own sauce from few ripe tomatoes veggie stock powder herbs salt and pepper that's it

Sour cream would be a good substitute. I often see the two used as substitutes for each other.

I am making some potato soup in the crock pot, right now. I think I need to look for my bay leaves.
We have had a lot of potato soup this winter, it's my younger daughter's fave.
@@SeeMindyMom If you can find it, and you have the money, the Aldi store brand of potato soup is wonderful. Comes in a family size pouch for about $3.25; you just add water and cook it for about 20 minutes. If you have some leftover vegetables that belong in potato soup (carrots, celery, onions), and need to use them up, you can boil them for five + mins. first and toss them into the soup at the beginning. Or toss the soup mix into the premeasured water that you have cooked the veggies in. You may need to add a little more water than the diretions call for.
Our store was clearing out the pouches of soups a week or so ago, and I tried to snag some. All that was left were the broccoli cheddar cheese soup bags, and I already had some of those.

Going plant based isn't going to be saving you money, it actually costs more for this type of product.
Well, I’m really talking about eating less meat, not going full plant based. But I think eating plant-based, that depends on how you utilize that lifestyle. If you use a lot of special products that are “meat” or “dairy” substitutes, then yes. But if you eat fruits/veggies/grains/nuts/oils, then I think it is a very economical way of eating.
I find it depends upon the vegetables selected/purchased.

You know what, it can be just as expensive to eat an all plant based diet as it is eat meat. Have you really seenthe prices of vegetables? Over the moon expensive ... insane.
I do not find that to be true in my area. I just restocked over 20lbs of produce from Whole Foods (the most expensive grocery store on my area) and it was less than $40. This included: zucchini, bell peppers, green beans, cucumbers, 2 kinds of apples, bananas, raspberries, blueberries, lemons, grapes…🤷♀️
Frozen vegetables are extremely reasonable and sometimes cheaper than fresh
If you eat “in season” then vegetables are reasonable. Lettuce is high right now but cabbage is not. 🤷♀️
