- NOTE: This video is one of several that were originally created with the intent to release it on a different channel dedicated to the topic of cooking, preserving, gardening and the like. Ultimately, the reality set in that we didn't have the bandwidth to launch that second channel so we've decided to share those "Real Food With Renee" episodes with you here on He Said She Shed.
If you're interested in more backstory on the channel that almost was, we discussed this in our recent video here:

We hope you enjoy today's family favorite - White Chicken Chili.

I love having my family over for dinner, but cooking for a large group can sometimes be a lot of work. So, having delicious, comfort food ready in less than 15 minutes is kind of a dream. That is why I keep quarts of white chicken chili on my pantry shelf. It is one of my most requested meals and is something that everyone, including the grandbabies, loves.
Using a pressure canner allows me to slow cook foods and really infuse amazing flavor. Then when it comes time to serve, I only have to make a few sides and toppings, and we are good to go! I might be reluctant to have my family over as often if I had to spend hours in the kitchen every time. With recipes like this, I am freed up to do what I love most, spending time with them.
This recipe is from Carolyn at Homesteading family: homesteadingfa...
Her recipe is great, as is, but I do add corn and Rotel (diced tomatoes and green chilies) to it. Yes, adding tomatoes might make this an unofficial white chili, but I love the added flavor they bring. That is the beauty of making soup, you can add what you and your family like and make it your own.
This recipe is also pretty mild, but if your family likes heat, you can add more cayenne or hotter chilies. I go mild because most of my family prefers that. I have a few people in my family that like the heat, but they can add diced jalapeños or dried peppers when they dish up their serving.
I also substituted pinto beans for great northern beans, because I have a lot of them. You can use canned beans instead of dried. When I am making a large batch of something, I try to use dried and save my smaller cans for other meals. I also like using dried beans because it allows me to control the level of sodium. Even low sodium beans have more salt than I would like. I also do not add any extra salt. There is salt in the canned tomatoes and the corn.
I really hope you will give this recipe a try. I promise you that once you start canning your own homemade soups and meals in a jar, you will feel empowered by learning a new skill. And you will also enjoy having more time with your family eating amazing and more nutritious, wholesome food.
If you make this recipe or decide to start canning, please let me know in the comments. I'd love to hear from you!
Hello, I watch Becky, & I had watched the show with you two canning meals in a jar. So happy to see you have a channel also.
It’s so thoughtful of you to make mild chili to fit the taste preferences of your family members.
I like things pretty mild and David likes to add heat. We keep lots of sauces around for anyone who wants to spice things up.
I just came from a video of you and Becky’s canning video.
LOVE watching your videos. I came from Becky's channel because I LOVED when you would join her. I need to try this! LOVE the end!! LOL!!! Thank you for sharing and I think it's GREAT to have these videos on this channel and not creating a new one :)
Hi! I watch Becky ( she is so easy to watch) and love when you are in the kitchen with her. This recipe looks great. I’ll be making this for sure.
I was indeed telling you not to forget the beans 😂 White chicken chili sounds like a good idea for this Sunday's dinner! Thanks for the video!
White chicken chili and chicken tortilla soup are a couple of favorite comfort dishes of mine. This looks delicious. Becky is lucky to have you to teach her safe canning practices. i enjoy your videos!
I love tortilla soup too! I don’t think I would have started canning if it weren’t for Becky. She showed me how easy it was and now I’m hooked!
Hi Renee! Thank you for the video. I grew up canning with my mom and I am just starting to get into it myself. I lost my mom 13 years ago and I truly miss her canning wisdom. I appreciate the tutorials. 💕😊
Can’t wait to make this and can it.
This looks a lot like the Chicken Tortilla Soup I can, it is so delicious and convenient in the winter! Yum!
Hi Renée, thanks for the video, it looks really good 😊
Looks so good
Can't wait to try it ..really enjoy watching u so easy to follow along and your very creative with your dishes looking forward to more recipes
Hi from Indiana Renee😊
I need a specific amount of protein per meal. When I make this and other soups I divide the ingredients per jar instead of mixing them in a pot. Extra work but it ensures each jar has the appropriate amount of each item ❤
I like doing that too! I make a lot of meals in a jar that way.
I love the cooking/recipe uploads
Hello beginner here may try
🥰🥰🥰
Hello! I just stumbled on to your channel 😊 This soup looks delicious 😋 I am definitely going to can this!! Thank you for sharing 😃
Thank you ❤
Yum! I must try!
Looks delicious!
Great video! I need this soup in my pantry! Did you add four cans of rotel?
Yes, I added four small cans, but you could add 2 large instead. I just happened to have the smaller cans in my pantry.
Great video - love watching you and Becky together as well! I am a new subscriber to your channel as well - I really want to do a cooking channel too, but Haven't gotten the nerve up yet LOLOL!
Hi. I too came from Becky and enjoyed all your videos with her. This looks delicious. Help me out as I too have the same canner and want 7 quarts. Instead of one cup of diced chili you used 4 cans of rotelle chilies and tomatoes? And the corn addition was three cans? I know you didn't drain them because you wanted the sweetness. I am patiently awaiting a sale on ground chicken or turkey. When I find it, this is the recipe I will can up. My sister makes turkey chili but with a lot more onions. Do you think changing the amount of onions would cause any problems with my pressure canning the recipe? Please keep making your cooking and canning videos along with the others. My bandwidth is also challenged most of the time❣️😊
P.S. And it seems to have been challenged while watching this video. My sister's recipe uses ground turkey which in my head equates to ground chicken, but is a totally different "animal" from boneless skinless chicken breast, LOL. So I guess my new question is how do you think all of the changes you made combined with extra onions and slightly precooked ground chicken/turkey would work for canning. I'm thinking 1" head space and 90 minutes processing quarts.😂
Hello! I’m so glad you enjoyed this video.
To answer your questions:
- you can safely change the amount of onions. It just affects the flavor
- I used 3 - 15.25 oz cans of corn, undrained
- I think cooked ground turkey or chicken would work, just par cook it as you would if you were canning it by itself. Then make sure to mix it well to incorporate so you don’t end up with a big blob of meat in the middle.
This made me think of canning my grandmas hamburger soup. It was so simple and so good!
Happy canning!! ❤
@@hesaid-sheshed Thank you very much. Have to go back now and look at your other recipes. I do love your she shed. Good luck and all your endeavors. God bless.
How do you know that the recipe is safe to pressure cook can if substituting ingredients? I’m new to pressure cooking. Is it just you make sure that only half the jar has solids and half has liquid. How do you know how long to pressure can it for? My family has a lot of allergies like tomatoes, bell peppers. So I’m thinking about substituting ingredients in pressure cooking recipes. Thanks Kathy 🐝🐝
Hi Kathy! Sorry for the delay in responding! When I started canning, I ordered the guidebook from the center for home preservation. They provide guidance as to what can be canned safely. Here is a link to their website: nchfp.uga.edu. Once you know what can be canned, there is a lot of freedom in making foods that are safe for people with allergies or food sensitivities. I hope this helps!
Couldn’t you just freeze this and eliminate the canning process?
You could absolutely freeze this! I just like having this on my pantry to save room in my freezer. ❤
you can eat it after preparing it, refrigerate it, freeze it, and can it.
