OMG! Cheesecake is my favorite. And I love the flavour of gingerbread and pumpkin pie. Pumpkin Pie Cheesecake was my fav - until NOW. I need this in my life. LOL
I've had a cheesecake similar to that only except for the crust they didn't use graham crackers with the seasonings in it like that they just ground up some ginger snaps and use those but yours looks awesome I wish I was better at baking cuz I would sure try to make that on my own

Cheese cake is my favorite dessert and as such I have recipes for a gazillion of them. Surprised I never came across this recipe before. Sounds like I have a new one to try! BTW, you do realize you do not have to set the cheesecake into the pan of water don't you. The water is simply to humidify the oven during the cooking process. You can put the pan of water on a shelf below the cheesecake with the exact same results and you needn't worry about water in your cake or messing with aluminum foil.
I did not know you didn't have to put the cake in the water! I thought the water helped regulate the temperature in the cake (keeps if from heating or cooling too quickly). Same reason they tell you not to remove a cheesecake from the oven once it finishes baking. Turn off the stove and crack the door to let heat slowly escape. Remove after an hour and let come to room temp them place into fridge to chill. There used to be a number of UA-cam videos by professional bakers showing this procedure. I haven't looked in a long time but some of them are probably still around.
I couldn't find the ones I was looking for. I did find several showing them baking the cheesecake directly on the rack, but hard to tell if there was water in the bottom or not in one. This recipe actually called tor the gingersnap cookies for the base, but my local store didn't have any so I improvised :) Thanks for watching.
