I also find that the juice that is left on the plate is some of the most delicious concentrated chicken stock you can get. I either add that to the sauce or another one. Never pour it out.

You may omit it, which will not affect the result very much.

would have thought the chicken would still be a bit raw , 15 with boiling water then 20 mins at rest over the hot water just doesnt seem enough for a whole chicken

And 20min more, with lid on(do not uncover lid after 15min is up), using residual steam. Hope u tried his recipe. I will but I think I will steam for 20min & sit for 20 min, I like my chicken without the “pink” lol

That was my impression too, apart from the white parts of the meat. 25. Ins to steam a whole chicken doesn’t seem like long enough…

Chicken can look undercooked and still be safe, or look cooked and still be unsafe. Just depends what temperature it was cooked to and for how long.

Always use a plastic or metal container to wash your ingredient. Washing directly in the sink itself is very unhygienic.

Why is it cold? I thought it would be like the roasted peiking duck. It was the biggest rip off of my life. I would need to paid a minimum one thousand dollars to eat that garbage. Just my opinion though. Great show!

My dear friend, can’t you practice a little hygiene, you CANNOT clean & marinate the Chicken directly in the Sink. You could have used a vessel, to do that. A sink is used to wash dishes with detergents. Nice cooking & recipe but think about the hygiene. Thanks
