Ingredients:
- 4 medium-sized karelas (bitter gourd)
- 2 tbsp oil
- 1 large onion, sliced
- 2 medium tomatoes, chopped
- 2 green chilies, slit
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 tbsp lemon juice

1. *Prepare the Karela:*
- Wash the karelas, slice them thinly, and remove seeds if desired.
- Sprinkle salt over the karela slices and let them sit for 30 minutes. This helps reduce bitterness.

2. *Fry the Karela:*
- Heat 1 tbsp of oil in a pan. Fry the karela slices until they turn golden and crispy. Remove them from the pan and set aside.
