Momo Shaping Methods: • Momos Recipe - 5 Ways ...
Chicken Gyoza
Prep time: 10-15 minutes
Cooking time: 1 hour
Serves: 35-40 pieces
Ingredients:
Dough
REFINED FLOUR | मैदा 2 CUPS
SALT | नमक A PINCH
SESAME OIL | तिल का तेल 1 TBSP
WATER | पानी 140 ML (ADDED GRADUALLY)
Chicken
CHICKEN THIGH | चिकन थाई 150 GRAMS
CHICKEN BREAST | चिकन ब्रेस्ट 150 GRAMS
CABBAGE | पत्ता गोभी ½ MEDIUM SIZED.
GINGER | अदरक 2 INCH (GRATED)
GARLIC | लहसुन 7-8 CLOVES (GRATED)
BLACK PEPPER POWDER | काली मिर्च पाउडर ½ TSP
WHITE PEPPER POWDER | सफेद मिर्च पाउडर ½ TSP
SALT | नमक TO TASTE
SOY SAUCE | सोया सॉस 1 TSP
SESAME OIL | तिल का तेल 3 TBSP
SPRING ONION | हरे प्याज़ 3 TBSP (CHOPPED)
SPRING ONION GREENS | हरे प्याज़ के पत्ते A HANDFUL (CHOPPED)
CORN FLOUR | कॉर्न फ्लोर AS REQUIRED (FOR DUSTING)
Cooking
OIL | तेल 1 TSP
REFINED FLOUR | मैदा 1 TSP
WATER | पानी ¼ CUP
Method:
Add refined flour, salt & sesame oil in a large more & mix well.
Further add the water gradually & combine all the dry flour, cover & let it rest for 15 minutes before kneading.
Knead the dough for 8-10 minutes after it has rested until it becomes smooth then cover & let it rest for 30 minutes.
Meanwhile, roughly cut the chicken & add it into a chopper (or you can mince it with knife as well), & mince it.
Blanch the cabbage by adding it into boiling water for 2-3 minutes then transfer it into ice cold water & let it cool down., then finely chopped the cabbage.
Add the minced chicken into a large bowl followed by ginger, garlic, black pepper & white pepper powder, salt, soy sauce & sesame oil, mix well for 2-3 minutes & add the chopped cabbage, spring onion bulbs & greens, mix again, the filling is ready.
To make the wrappers, divide the rested dough into quarters or 4 equal portions.
Take once portion, cover the rest with a damp cloth, using a rolling pin flatten the dough into a thin shit, almost paper thin, keep dusting corn flour as required.
Then cut the sheet into 4 or 5 inch circular wrappers using a cookie cutters or a glass or a bowl depending on the kind of size your prefer, make sure that the sheets are well dusted with corn flour, prep the wrappers as required.
Stack all the cut wrappers & keep them covered.
To shape the gyoza, place a spoonful of the filling in the centre of the wrapper, apply very little amount of water on the edge, then fold the wrapper into a taco like shape & make pleats from one end to another, make sure you pinch tightly & seal it.
To cook the gyoza, place a nonstick or a seasoned pan over high flame , add oil & let it get slightly hot.
Place the shaped gyozas on the pan & cook over medium flame until they turn light golden brown from the bottom.
In a separate bowl mix refined flour & water to make a slurry.
Add the slurry into the pan, make sure it spreads evenly on the bottom, cover & let the gyozas cook over low flame for 5-6 minutes, then take the lid off & cook until the moisture gets evaporated & a beautiful crispy crust is formed.
Once cooked, invert the gyoza onto a plate, your delicious & authentic chicken Gyoza are ready, serve them hot with a simple soy & chilli oil mixture.
