First Okonomiyaki in Japan feels so special haha. Ours was at a small shop and we also got it with beer! haha

The stuff that is put on the okonomiyaki (after the sauces, before the katsuobushi) isn't furikake. It's aonori, basically powdered seaweed.

oh mann that's hard! The vendors didn't speak much English, but it could be worth putting it into Google translate and asking! Might be easier at a restaurant versus a food stand since these run on crazy volume for prep!
