When maintaining the speed while turning is your foot hovering over the brake or accelerator?

When you come to complete stop you gently release the brake pedal and than, when turning let go of brake and slightly tap gas to turn. After that when you in the middle and made the turn gently increase speed.

How do I maintain that slow speed when doing rolling turns ? Do I keep my foot on the break during the turn or do I release the break once I have the slow speed and just accelerate with my foot on the gas after the turn is complete ?

I don’t know why you have to check all mirrors to turn

It's a safety check to avoid accidents. You check mirrors to make sure the car behind you isn't speeding or is going to try to make the turn before you. Alot of drivers will think they can make a turn faster than you. Or the driver could be driving straight through while you're making the turn. You're also checking for pedestrians or smaller road users such as cyclists, mopeds, motorcyclists etc.
