Catch and Cook Ep:1 Whiting

  • I decided to start a new series called catch and cook. I am going to keep my original taste test series where I eat weird fish but also have this new series where I target good tasting fish for the purpose of cooking them. Today I filmed ep 1 in Navarre, Florida. The target species was whiting and Pompano. I was only able to get whiting, but still had a great time doing it.

Whiting are way underrated as a catch. November through March all along the Gulf of Mexico 1lb to 2.5lb whiting are common catches.
I will put out 4 baitcasting rods on 9 to 10 ft light surf rods. The reels are spooled with 10 lb mono and a 1 oz to 3 oz sinker. A simple 4 to 5 ft section of pvc pipe makes an excellent rod holder. I use size 2 circle hooks on a 4 ft 20lb leader.
The line has a snap swivel set to free slide on the rod end of the line. Another snap swivel is on the end to attach the hook and leader.
A peeled slice of shrimp is all you need. Use just enough to cover the hook
Cast out as far as possible.
Tighten the line till the rod tip bends. Put out the next one.
Usually by the time I get all four rods out one has a fish on.
By the time I land the fish and cast out another bait there is one on another line.
I have filled a cooler with 50 to 60 lbs of 1.5 lb plus whiting in three hours.
They freeze well if you don't clean then. Clean what you will eat at a meal. I clean them just like you did.
I roll them in seasoned cornmeal and fry. Eat them with potato salad, mac n cheese, collards or any side dish.

Jim Presley - Old Fishing Fool Good information! I ice fish them in the winter in Saint John, New Brunswick, Canada. They are called silver hake by the local people. I plan to use larger circle hooks to catch the large ones.

i grew up on whiting fish. we would never fillet them. we gut them, save the head for fish stock, and scale them. then depending on the size just chop them into 3 or 4 pieces and fry'em up. the fish is so easy to eat. basically the bones are just the spine. once you cook them it just comes right off when you open up each piece.

I'm a whiting fan as well. Way underated and such a beautiful silver and purple sheen in bright light. I was killing them yesterday at Melbourne Beach with peeled shrimp and a small piece of Fish Bites on each hook.

Take those whiting filets and roll them up with chopped capers or green olives and onions with a slice of lemon peel ( you can whiz the veg in a blender to make a spread for the fish if you want to make it easy), hold with toothpicks and saute in garlic butter. Look out! It's a taste bud tantrum...:) Goes really good on any pasta. Herbs of choice of course.
