    TY for sharing! In NH prices are going up. I also had a sketchy feeling and a month ago I brought up my pressure canner and started canning meats and veggies. About a week ago, my husband was laid off. Boy am I glad I started canning a decent amount of jars in storage. Will keep on canning and saving!

    for the flies I add to a jar halfway up I add cheap maple syrup and then to that I add chicken bones two or 3 then poke holes in the lid big enough for the flies to get in but they can not get out it also works on catching hornets and wasps

    I have never greased my gasket in the 24 years I have canned…no problems at all. No cracking, shrinking or deteriorating of the gasket in any way. Neither of the manuals for either of my presto canners mentions greasing the gasket anywhere in the care & maintenance section. The ONE TIME I did grease my gasket was literally yesterday (because I heard two people on UA-cam videos saying to do it & thought I must’ve been doing something wrong all these years…🙄), my canner gasket leaked steam out the side & wouldn’t build much pressure! It slowly got to 4# pressure before I heard the steam escaping…at which time I had to turn off the stove, wait for pressure to drop, open up the canner & quickly wipe the gasket & lid with vinegar to remove the greasing I did. After that…it sealed perfectly & I was able to can my pork.
    I looked in my canner manuals after this experience & saw it is not recommended by Presto. I would suggest no one do this…as it created my only canner failure ever.
    As a side note, when I was working in the restaurant industry, we had to use special rubber mats that are made for kitchen use…because cooking oils and grease break down regular rubber mats. Again, I’d suggest not using grease on your gaskets. There’s no recommendation for it & it could actually deteriorate your gasket faster.

    I’m pretty sure the canned vegetables at the store are produced with the intention of making a profit, therefore I grow, can, and freeze as much as possible.

    Tried coring after blanching and that is a mess. So much easier the way you do it and that is how I do it now.

    Beautiful tomatoes. I noticed there weren't a ton of seeds and pulp to deal with. Do you know what variety they are? We are having a hard year with our tomatoes due to an over abundance of chipmunks so I will be buying some from the farm store near us. A little expensive but they are good. I got some before ours came in. Here in New York to.atoes are late July and August some til frost.

    Hi, I just started my journey with pressure canning last Friday night. Thank you for explaining pressure canning in detail. How will I know when all the air is out the jar to prevent bacteria?

    Why do we need to add lemon or citric acid if we are pressure canning? We don't add that to meat, corn, beans, etc... that's why we pressure can those items.

    Hi I just found your channel, my wife and I both can from our garden too. I subscribed as well. We both live in Cullman County Alabama. Thank you for the info and hard work . God bless you. I had a question, we both just started canning yellow squash. Alot of videos says to not use vinegar, do I need to use vinegar at all in the canning solution? I don't want a vinegar taste I don't want it pickled. But I know it has to be persurved. Please help on this . Thanks

      Late, and not an expert here but like to share my findings. Seems the USDA stopped recommending to can squash because of how soft it gets; it has a difficult pattern of heating inside the glass jar when it gets soft and compacted and is therefore not found to be safe. USDA attempted to follow the procedure that was explained in previous books of theirs and they could not get within safe parameters for the food. USDA now only supports freezing or pickling at this time.
      Also, i know people might get tired of hearing this, but canning is as much a science as it is cooking and so i would not listen to too much "mom or grandma did it like this" recommendations. "Rosered homestead" video called "annihilate botulism" which explains the reasoning behind USDA recommendations. Remain safe.

    It is not easy to get tomatoes canned and I say that because it is alot of work from the beginning getting your garden ready to plant,giving your plants love and care they need .fight the weather from destroying them, keeping up picking the fruit at the right time getting them canned in time. I probably forgot something but I think we understand it's not easy.

      @@marybethham4967 May be a silly question but can you use peanut oil or olive oil to grease it? Im just getting started and really enjoying how you explained the process.

      @@BornAgain717 you can use olive oil. Just put some on a paper towel and run it inside gasket and around the outside.
