Great question! Mihi is correctly pronounced with a very harsh H more like miki. It was at one time spelled michi and that became the tradition retained with mihi. It is also practical, as is the harsh H in general--and the Roman culture & liturgy is marked by practicality--since without it, mihi would just sound very much like mi (another word); it is the same with nihil: properly pronounced nikil.
