    Kerala style prawns pickle or Chemmeen Achar…
    In India, we make pickles with different kinds of ingredients; with raw mango, lemon, gooseberry, mixed veggies, grapes, green chilies, fish etc etc. My most favourite pickle is prawns pickle. Prawns pickle is a Kerala speciality pickle as prawns are abundantly found in Kerala. I don’t think there will be even a single Keralite (who is a non-veg) who can resist this pickle. It’s a true Kerala delicacy.
    I have made it several times and kept it outside for up to a week without any problem.
    Please ensure that there is no water content in any of the items fried in the oil used for making this pickle.
    Store it in a clean dry glass jar or ceramic jar.
    This prawns pickle can be served as a side dish along with rice and with literally any of the Indian meals.

    Ingredients :
    400 gms small size Prawns - shelled & de-veined
    For Marination :
    1 tbsp Kashmiri Red Chilli Powder
    ½ tsp Turmeric Powder
    ½ tsp Salt (or as per taste)
    For Masala Paste :
    2 tbsp Kashmiri Red Chilli Powder
    ½ tsp Turmeric Powder
    ½ tsp Salt
    4 tbsp White Vinegar
    For the Preparation of Pickle :
    200 ml Vegetable Oil
    1 tsp Mustard Seeds
    ½ tsp Fenugreek Seeds
    1 tbsp Ginger finely chopped
    3 nos Green Chillies
    150 gms Garlic
    2 to 3 sprigs of Curry Leaves
    2 tbsp White Vinegar
    Note :
    This prawns pickle has shelf life of 5 to 7 days if kept outside and 1 month if kept refrigerated provided there is no moisture content. Make sure that the prawns are fried well. Please use dry spoon always .
