    The food look great as always my mouth is already watering
    Eitan a little Indian tip for the uppam (appam) don't fri it in oil fri it with an onion
    Take a peeled onion cut it into half and take a fork and poke the onion with it and then just spread the onion on the pan just before putting the batter
    This gives it more flavor I do this at home and it turns out great even for dosa I do the same
    And in the sambar instead of potatoes put bottlegourd

    You gotta bring the heat up not too hot and not too cold for the pan beforing pouring in batter for both dosa and uthapam, just sprinkle some water to check the temp. The water should Vapourisr instantly that's the right temp. Also try this combo of veggies for sambar... Egg plant, drumsticks, potatoes, raw (unripe) mangoes, pumpkin. That's a marriage style sambar those veggir flavours will be rich also add some grated coconut at the end of sambar which will make it tastier.

    Coconut chutney add some curry leaves, split chickpeas (not the usual type), salt, and a little garlic. Add some asafoetida during tempering

    It's good. But just add more oil in Tadka and let oil warm before adding spices. It will enhance the taste 2 fold

    My biggest struggle is the coconut chutney. My stupid little magic bullet gets noisy as hell when I put coconut in it.

    • @nandi_1582
      @nandi_1582 2 роки тому

      But you know what?that magic bullet is the best when you wanna make this chutney. Mine gives the best outcome when I blend my chutney.

    Asafoetida is the most important spice in a sambar 😢 And shallots go with sambar not onion 😢
