With turmeric and salt first marinate the fish
Cut potato like this, or smaller if you wish
Heat mustard oil till it smokes in the pan
Fry fish and potatoes as lightly as you can
If every now and then you forget to turn,
It will be very bad, your potatoes will burn
What is our goal? To make macher jhol!

Coriander, cumin, chilly powder and turmeric,
Add the water, make the paste
Like this, not very thick
One or two bay leaves plus pinch panchphoron
Buy from the shop, or make on your own
Add all the ingredients in the heated oil
Add potatoes, add the water,
Let it come to boil
Add salt and green chilly, for me only one
Add the fish and let it simmer, till the jhol is done
Enjoy with rice, or straight from the bowl

Years ago, in La Martiniere For Girls in Calcutta (yes, I am that dated), there was an old Muslim darwan (guard). Every time he saw me, he would say, "Dal, bhaat, macher jhol!". It gave him great pleasure to use his unique greeting for me daily as I trudged out bedraggled after a hot day at school, to catch the 8B double decker bus back home to Rashbehari Ave. What a sweet man, old school Muslim guy. I never forgot that. Now your song is bringing all that back, along with my Mashimas and Pishimas, Dadu, Kaka's and Mama's (aunts and uncles) chatting away in Bengali while one auntie Meena knitted away furiously and the cook brought in the Macher Jhol and Alur Dom, and Luchis, etc. Aamar Shonar Bengal! How I do love thee! Thank you Sawan!!

The darwan in question was one Abdul or Afzhal. I think Abdul. Of course in Islam, every name means God or Son of God! He was the sweetest man. Reminded me of the darwan in the movie "Mirch Masala' by Ketan Mehta from 1987. Same old world 'bhodrolok Mussulman' type, who would give their life to defend their honor or yours. Those stoic people who labored daily for us 'rich' kids in private schools,... who knew us better than our own parents! I miss that connection in America. Although the bread is heavily buttered here, and we sit on satin cushions, there are no Abduls or Afzhals to guide us through life.
What can I say......Bangalis and their 'daak naams'...sadly of all the ones I had...this was the least humiliating of them all....potol and gooblet don't even measure up to the humiliation of my other names....
I think his name was Abdul....I can see his face even as I write...wonderful memories.....even Johny the ice cream man....there was a certain endearing quality about all of them....
Oh yes, Johnny!! I had forgotten about him. Also the supari wallah. We got detention for looking through the windows into the Boy's school, so we would post a 'guard' by the door to alert us to random teachers crossing by, ha, ha! Good memories.
All this due to our one and only Sawan and these amazing musical compositions! Truly a gifted artiste! Sawan, I am enjoying your songs on so many levels. Musically very good, they also tickle the Bangla funny bone, and then there are the warm fuzzies meeting up with another expat from your distant land, plus the La Marts Girls School crowd! Its like visiting Little Bangladesh in Los Angeles and seeing men in dhotis eating macher jhol and torkari while reading Anandabazar Patrika newspapers in Bengali!
also the view from the window is pretty nice, the greenery is rather soothing .....
