- A Cuban sandwich is a combination of roasted pork, ham, and cheese that originated among the Cuban workers in the cigar factories in Key West, Florida as early as 1831. I tried to keep the flavors authentic & cooked it up on the Lone Star Grillz lonestargrillz.com offset vertical Smoker.

Marinade Recipe
2 cups bitter orange juice
1/4 cup chopped garlic
2 tablespoons cumin
2 tablespoons dried oregano
1 1/2 tablespoons ground black pepper
Mix well and pour over pork

I love Cuban sandwiches. Some friends and I went to an authentic Cuban Café and a friend asked if he could get a Cuban sandwich without mustard, he was told "NO!".

I worked at the Miami Airport for a few years and learned to love Cuban food. Now I’m craving a real, genuine Cuban sandwich.
I live in Tampa (home of the cuban), I've never seen one that good.
Go to Wright's. They've won best of the bay for Cubans quite a few times. Also, Big Ray's on Interbay has a bangin' Cuban.

Looks like a good sandwich. Most of the shops here in Tampa use a combination of mustard and mayo. Also the bakeries that make Cuban bread use a knife cut on top of the loaf and insert a palmetto leaf before baking. It adds a slight touch of flavor to the crust and after baking they pull it out but occasionally a bit of the leaf stays in the bread.
I'm sadly behind the times in that I've never had a Cuban Sandwich, but my son sent pictures of some he was enjoying when he was in Miami recently. Yours looks like it could come out of the best joints in Little Havana :)

I was worried right up until the end you didn't have a plancha or flat griddle tray that could press the sandwich (because of course it's a grilled cheese sandwich on steroids) Then you blew my mind again with using that grill attachment on the Lone Star. That was epic

Hey man another absolutely fantastic video- thanks! Quick question- how did you cook the pork to fall-off-the-bone at 250F for only 3 hours? Was it because you braised and covered it? When I smoke butts on my shitty generic kettle I keep it at 250 but it takes like 7 hours, wrapped in foil for the last 2.
We Cubans marinate the pork for 2-3 days, in the refrigerator. Also, we bake the ham, and not use sliced ham, which is a bit too salty. It was invented from the Christmas dinner leftovers.
I've been to Cuba last year and have to say your version looks way better than what I had in Cuba!! : ) Well done!!! Must be tasty!

It was invented by Cubans, with left over Cuban Christmas dinner. Regarding the difference between Greg's sandwich, and the sandwich you ate in Cuba. It's because Cuba is a communist country, were everything is scarce, and probably the sandwich filling had skimpy portions, lack of condiments, and marinade.
Hey Greg, would you get a more authentic mojo flavor in the pork if you marinated overnight? Would it be better or to over powering? I really want to try this recipe. Any tips would be appreciated.
We Cubans marinate the pork for 2 to 3 days in therefrigerator. We also use baked ham, not sliced ham, which is a bit too salty.

I enjoyed this cook but I sure wish you'd bring back pouring the beer of the cook into a glass. I always enjoyed that part.

Looks great, did you use a thermometer to check that the pork was cooked to your temperature?
Not necessary when its coming off the bone.
We are going to be making this tomorrow - so could you clarify for me the timing. I understand it goes in at 250 degrees for an hour to an hour and a half uncovered, but is it another three hours after you cover it or three hours total cook?? Definitely don't want to overcook. Thanks (PS: we have just under a 5# pork.)

If you can’t find bitter orange, you can also just use lemon or lime juice. Some people prefer using that instead of the bitter orange. Also, I know you said you got the bread from a Cuban restaurant, but that didn’t look like Cuban bread. The crust is too dark and Cuban bread also doesn’t have that score pattern on the top. Cuban bread is usually much lighter in color, and the loafs are usually bigger. Restaurants in Miami cut the loafs down to make the sandwiches. On average you can get about three sandwiches from a single loaf of bread. Supermarkets do sell smaller sandwich sized loafs, but restaurants don’t really use them.
Also, this sandwich has two different builds. If you live in the Miami area, the build is pork, ham, Swiss cheese, pickle and yellow mustard. If you live in the Tampa area, they also add salami to it. Some places also add mayo, but I think that’s sacrilegious.
If you replace the Cuban bread with an egg bread, you wind up with the Cuban sandwich’s cousin the medianoche or midnight sandwich. The sweeter bread gives it a completely different flavor profile. You should try it.
