Thanks for the encouragement! I started my starter about a year ago and just purchased a grain mill. I’ll Also be starting my garden for the first time this summer. Likely in pots. But I appreciate the idea so slowly becoming who you want to be step by step skill by skill. 😅
Love these types of videos! So encouraging and also great reminders to walk your own path inspired by others not mimicking others. Grains in Small Places recently put out a video about starting sourdough starter from scratch with fresh milled flour. Her channel is a great resource for all things fresh milled flour. I’ve heard that using fresh milled rye works well, and then you can switch to whatever fresh milled you want once it’s established. I’m actually going to give that a try starting tomorrow since we are finally done traveling for a bit and my rye berries arrived. Another trick is to add some raisins to the starter until it’s stronger then take them out.
This is very true! It is easy to compare journeys and feel like a failure. My husband is good about reminding me that everyone's life is different, and ours is going to look way different from our parents, siblings, or a UA-camrs!
Modern homesteading was popular way before 2018. 😉 I discovered it in the late 90s, but didn't really purpose to implement all I could until the early 00s. I remember distinctly making a list of all the children and I could learn, make, do, etc, right where we were - in the middle of a big city. That paved the way for small town urban homesteading, and then, finally, actual (modern) homesteading in about 2015. Now the children are all grown, married, and having children of their own, but each family carries on doing their best and we all live near each other in the country. It's such a blessing to see my grandchildren gardening and helping their parents make basic things like corn tortillas from their own corn that they helped sow, tend, harvest, grind, and use. Or butter and cheese from milk they helped get from the family goats or cows. Or eat a lamb roast that came from the lamb that they watched being born, helped raised, helped take to butcher, and helped cook. Or eating eggs they gathered that day. There are so many things I've produced at home over the years. Many I continued doing, but some I've decided to choose saving my physical energy over producing an alternative at home. One example I can think of is ziploc freezer bags. They sure come in handy when I'm harvesting the strawberries and raspberries!! At least I know how to live without them... but for now I choose to be thankful I can use such a convenience. If ever I didn't have access to a freezer, we'd just eat all the fresh berries we could, make jam for the year, dry some for winter, and sell or give the rest away. Anyway... My husband makes his own coffee daily, and we take turns cooking our dinners and lunches from scratch, i make gf bagels, english muffins, gf white sandwhich bread, oat tortillas and sorghum pita bread, gf pumpkin bread, and oatmeal cookies for me. My daughter has throat birth defects and I have made her SO much from puree real food to vegan goldfish crackers, oat raspberry mini pancakes, buckwheat mini waffles, and indian toast with curry and mexican oatmeal with oatflour, 3 types of hummus with different dry beans I grind. Glory to God for me learning anything as Im a hot mess with learning new things and I still make mistakes on old recipes❤😂. We use store bought crackers and sunbutter and coconut yogurt so I am doing a balance and want us to be thankful for all types of food. Homemade or not❤❤❤
This is wonderful how much you make from scratch and that you are able to adapt it to the needs of your family, what a blessing. The sorghum pita bread sounds delicious, I have a lot of sorghum that I bought to mill and still haven't explored much with it, so I will look into the pitas!

I had a hard time with sourdough as well. I tried buying the dry and that did not work, another never got very bubbly. It wasn't until recently a friend told me her church was having a class on sourdough and the teacher was giving away some of her sourdough to everyone. That was last month and I have been making all things sourdough since and loving it! 😊

You are correct that contentment is such a vital virtue for us homemakers to stay in focus for the family vision. We didn't have a lot while raising a family over three decades ago but we knew one thing - to lay a foundation of a Christian faith for our children as much as we knew how. It was hard work leading by example, but by God's grace, we have done so and are closed to the finish line of the child rearing phase. Homeschooling is expensive. We now finally are able to purchase things that we have waited for, many years ago. So grateful for His hand over us for the many life lessons we have learned. You are matured beyond your age. Praise the Lord that you are such a helper to your husband's vision! Oh, when you mentioned Titus 2, we used to have a Titus 2 women group in our former church. So much knowledge was imparted from the older women to us young moms then. God is so good! Just subscribed ❤

So thank you so much for your guidance & inspirations! My question is, how do you stay positive and patient when it comes to conceiving? It seems like you guys have tried for years, whereas we only started trying this year, however, I find myself getting really sad about not having kids yet & even feeling “unpurposeful”. It is so nice to hear about your garden adventure. We moved into our house four years ago (in January), and I have made my garden a little bigger each year. It has been a struggle though. Our land had most of the topsoil stripped because it was a mess before our house was built and underneath was a lot of hard, red clay. I've tried raised beds (which were hard to keep watered in the heat of summer here), and I realized that trying to do much of anything outdoors in late July in NC is pointless. 😆 Getting ready to gear up for another season this weekend, and I am so grateful for your thoughts and the inspiration!
Hi Elyse, it's so good to hear from you! That is so challenging with the poor soil conditions, we had that issue with the Kentucky land and also ended up doing the raised beds. We put a thick layer of mulch/woodchips on our raised beds that year and it helped keep the soil under it very moist. We didn't have a water source on our land, so we brought some jugs from home, but mostly trusted God to water for us, and I really do think the thick layer of mulch is what kept things from drying out. That being said, we were in Kentucky, not hot hot North Carolina, so that may not make much of a difference or you may have tried that. The joys of gardening haha, I'm excited for your 4th garden season here and pray that you see and feel the momentum from the past few years efforts!

Thank you for your encouragement as always, you are such a joyful person to listen to. I love the name of the channel "make it make' an Amish man once told her if you can't get it to make "make it make' use what you have do what you can etc. I think that goes right along with what your talking about. I have been working many months to produce a good sourdough loaf and have finally found some techniques that really work for me and wanted to share them with you and your listeners. The Channel "Healthy with Happy" has a video on sourdough with 100% fresh milled flour that I have had great success with, she also has a starter that she says is really easy (I already had the starter going). Also I borrowed the book Bittman Bread from the library and have used his technique for sourdough with fresh milled flour. That also went really well. I have also combined different things from both resources and it turned out well. Also something that helped alot with the size loaves I was making with these techniques was a 2 quart dutch oven instead of a larger one, it really helped the rise with these smaller loaves, I think it's the heat surrounding closer maybe. A 2.5 would be better as this actually hits the lid but still turns out so nice. But as usual if you don't have that "make it make", I was using a 5 quart before I realized I had a smaller one I could try. One more thing, could you tell me if you like the electric tea kettle you were using in this video and what kind it is? Thanks so much!

Good morning! It’s a great topic today and one that has hit multiple points for me. Yesterday I was working on an organization project at home and came across a kit I purchased for making cold brew using a kit that works with a mason jar. I’m going to get that going today. We RARELY buy coffee out but I think being able to do special beverage treats especially coffee at home, encourages us to change our thinking to include having the ‘special’ at home which is beneficial on the budget. I recently read or watched a video that said rye flour is ideal for getting a quick and successful sourdough starter going. I will be setting that up today as well now that I picked up some rye flour. Apparently, you do not need to continue using rye flour for feeding and making the bread if you don’t want too. Starting seeds is both exciting and nerve wracking. I’ll be starting my seeds this week and I’m excited to see how your garden grows this year. You are a blessing and the books you mention are beautifully encouraging as are the scriptures. As a Grammy now, I love Titus 2:1-5 more than ever. 🤗

Kelli, You just inspired me to try sourdough again. I just began milling this year and what a blessing that has been for our health! 💗 Any tips for how to make it work for two people without throwing away so much discard? We love bread, but really only consume at most a loaf and a half a week.
Ah yay, I'm so glad! My favorite thing to make with the sourdough discard is crackers. It's so easy you don't need flour, just the discard, butter or olive oil and salt! I also save the discard in a jar in the fridge and will then make pizza dough or sourdough dutch pancakes. And when I'm not using the sourdough I just keep it stored in the fridge so I don't have to feed it!
I just purchased a kitchen scale, have tried to do a sour dough starter 2x now both failed. I hoping using the scale for weight instead of a measuring cup that it will help my starter to be a good one. Also may I ask what video editing software you use to edit your videos. Thx!!
Yes, the scale definitely helps, I was without a scale the first time and it definitely helps! I hope your next try is a success! And I use imovie on my laptop, very simple and user friendly!

The best SD Starter tip I received… use rye. Grind it fresh if you can. If not, buy a good quality whole grain rye flour. Starters thrive on rye.

My question is, how do you stay positive and patient when it comes to conceiving? It seems like you guys have tried for years, whereas we only started trying this year, however, I find myself getting really sad about not having kids yet & even feeling “unpurposeful”. If this isn’t too private to share (which I totally respect!), then I would love to hear how you do it 🙏 I am sure you would be communicating with the Lord on this manner, but even the practical things you do to support your fertility would be very interesting 😊

It is so nice to hear about your garden adventure. We moved into our house four years ago (in January), and I have made my garden a little bigger each year. It has been a struggle though. Our land had most of the topsoil stripped because it was a mess before our house was built and underneath was a lot of hard, red clay. I've tried raised beds (which were hard to keep watered in the heat of summer here), and I realized that trying to do much of anything outdoors in late July in NC is pointless. 😆 Getting ready to gear up for another season this weekend, and I am so grateful for your thoughts and the inspiration!

That is so challenging with the poor soil conditions, we had that issue with the Kentucky land and also ended up doing the raised beds. We put a thick layer of mulch/woodchips on our raised beds that year and it helped keep the soil under it very moist. We didn't have a water source on our land, so we brought some jugs from home, but mostly trusted God to water for us, and I really do think the thick layer of mulch is what kept things from drying out. That being said, we were in Kentucky, not hot hot North Carolina, so that may not make much of a difference or you may have tried that.

I start a new sour dough starter after Passover using freshly milled rye . It creates a very strong starter in less then a week.

Thank you for your encouragement as always, you are such a joyful person to listen to. I love the name of the channel "make it make' an Amish man once told her if you can't get it to make "make it make' use what you have do what you can etc. I think that goes right along with what your talking about. I have been working many months to produce a good sourdough loaf and have finally found some techniques that really work for me and wanted to share them with you and your listeners. The Channel "Healthy with Happy" has a video on sourdough with 100% fresh milled flour that I have had great success with, she also has a starter that she says is really easy (I already had the starter going). Also I borrowed the book Bittman Bread from the library and have used his technique for sourdough with fresh milled flour. That also went really well. I have also combined different things from both resources and it turned out well. Also something that helped alot with the size loaves I was making with these techniques was a 2 quart dutch oven instead of a larger one, it really helped the rise with these smaller loaves, I think it's the heat surrounding closer maybe. A 2.5 would be better as this actually hits the lid but still turns out so nice. But as usual if you don't have that "make it make", I was using a 5 quart before I realized I had a smaller one I could try. One more thing, could you tell me if you like the electric tea kettle you were using in this video and what kind it is? Thanks so much!

@homewithkelli Yes, my dad took us everywhere! We lived in Pietermaritzburg. We went back as a family and it was so different. We hiked up to Policeman's helmet rock in the Draakensburg. Are you there now?

We just got back from visiting Scott's family, we were there for just a few weeks. And every time we go back, Scott is disappointed in the decline of Pietermartizburg, it's very sad!
Good morning! It’s a great topic today and one that has hit multiple points for me. Yesterday I was working on an organization project at home and came across a kit I purchased for making cold brew using a kit that works with a mason jar. I’m going to get that going today. We RARELY buy coffee out but I think being able to do special beverage treats especially coffee at home, encourages us to change our thinking to include having the ‘special’ at home which is beneficial on the budget.
I recently read or watched a video that said rye flour is ideal for getting a quick and successful sourdough starter going. I will be setting that up today as well now that I picked up some rye flour. Apparently, you do not need to continue using rye flour for feeding and making the bread if you don’t want too.
Starting seeds is both exciting and nerve wracking. I’ll be starting my seeds this week and I’m excited to see how your garden grows this year. You are a blessing and the books you mention are beautifully encouraging as are the scriptures. As a Grammy now, I love Titus 2:1-5 more than ever. 🤗

Kelli, You just inspired me to try sourdough again. I just began milling this year and what a blessing that has been for our health! 💗 Any tips for how to make it work for two people without throwing away so much discard? We love bread, but really only consume at most a loaf and a half a week.
Ah yay, I'm so glad! My favorite thing to make with the sourdough discard is crackers. It's so easy you don't need flour, just the discard, butter or olive oil and salt! I also save the discard in a jar in the fridge and will then make pizza dough or sourdough dutch pancakes. And when I'm not using the sourdough I just keep it stored in the fridge so I don't have to feed it!

I just purchased a kitchen scale, have tried to do a sour dough starter 2x now both failed. I hoping using the scale for weight instead of a measuring cup that it will help my starter to be a good one. Also may I ask what video editing software you use to edit your videos. Thx!!
Yes, the scale definitely helps, I was without a scale the first time and it definitely helps! I hope your next try is a success! And I use imovie on my laptop, very simple and user friendly!
