    Ms. Lippy Mary Rose/the rose homestead has a wonderful youtube channel that does all her baking using a grain meel and shows how to clean it. she's wonderful! you could learn a lot from her. Her youtube channel got hacked not very long ago and is trying to build it back. I certainly hope you give her a watch. your friend patty

      Girl I was sweating; but Buddy agreed- it had a wonderful taste; but it’s on the heavy side. This would have made the perfect bagels. Now we test round 2👍🥰❤️

    I have the whole setup as your mill, book, grain, and all. I'm definitely on board with the learning. I've got the sunflower Lethicin in the freezer unused, too. Can't wait for the next bread-making video. I think your bread looks so good. I bet it tastes good with real butter.

      Good Morning Ms Paula, this morning I’m gonna make a playlist just for bread, one of our friends on here suggested it and I agree, it will help all of us as we learn. I’ll be honest, when I can learn this and get a recipe that works for us, this will change our lives/ health and it takes 1 minute to grind, so not any hard work at all. 🥰❤️

    I think it’s just the grain is just different from store bought flour. You’ll figure it out over time and practice! I thought it looked tasty!❤️🙏🏻😘✨

    Ms Lippy, it’s the lethicine that makes the bread light. When I use my own recipes I grind 3/4cup of berries for every cup of regular flour called for. I watch Sue Beckers utube channel to learn. It’s fantastic! Ms Lippy you did a great job. I also like their sugar.

    Great job Lippy.I know what next year's project is When Buddy finishes his shed expansion he'll be doing a sound proof commercial grain mill next to your extra kitchen.I know you have the fish part down,once you have the bread loaves down you'll have a new miracle to add to your collectionBTW, add cluck n good croutons for this holiday season.You can also decapauge the beginning loaves and use them as p.t. training weights.Dont give up

      Mr Dave, I’m telling you - this loaf of bread was so heavy, Buddy said - how many pounds of grain did you use? lol lol.. I’m gonna use the Cluck today when I make the croutons, and when Buddy has them to top his tomato soup , I’m gonna tell him - Mr Dave suggested it!!! I didn’t think about that honestly; but it will make a great flavor 👍👍

    Hi Ms Lippy, you can still use your recipe. Instead of measuring by cup you can google the gram weight of each cup measurement. Always measure by weight if you are using a mill, it’s more accurate and the final result will be a success. 😊

    Good evening Ms Lippy. I just mastered what we call Ms Lippy bread now I'm going to have to master a new recipe😂. Have some pineapple juice in the fridge maybe Lippy Hawaiian rolls this weekend. Bunny bread is one of our favorites but almost never eat it. Y'all will get it I'm sure. Looked really good. Y'all watch that hand. Have a blessed evening.

      Yep the hand is a little mad; but they said PT for 6 weeks, so I figured I would jump start PT, lol. I found pineapple extract, and that nailed the flavor for Hawaiian rolls, with the pineapple juice. Buddy sampled the bread, he said - it tasted great; but he wanted to put it on the scales😂😂

    We live, and we learn with Ms Lippy 😆. I love dence bread, I kept saying put some butter on Lippy 😅 . With French Bread, my daughters only like the inside. I like the outside shell, which is what they leave. Your bread looked good for a trial run.

    Try putting in less flour when you put in bow, it looks like has too much flour. Then add when needed as it’s kneading.

    Do your recipe with the lecithin. Then you will have Real comparison of if lecithin makes the changes you want.

    Hey girlfriend, so far we are ok….funny thing is they have issued a hurricane warning for Macon….strange how it will come up this far. Just a category 1 but still dangerous for us. The worst is suppose to hit between 12:00am to 5:00 am tomorrow night.

    Looks good to me!
    I would add a little citric acid to the lecithin.
    I havent used flour from a home mill although I've used an organic flour and it was dense too. I think it was spelt or maybe einkorn.
    Practice makes perfect. You'll get it down! Good video!
    By the way, take your fist on left hand and punch the dough like you're really angry with it. Beat that thing like you mean it! Lol
    Back in the 1990's I had surgery on my left elbow. Even though I'm right handed it still was very awkward. I learned I could still make bread by punching it with my right fist. Its darn good therapy.😂

    Ms. Lippy, make a bread playlist so you can show your progress. Home milling is a great adventure. I bet the more loaves you eat from clean quality flour, the better you both will feel. Years ago I had a big, bulky stainless steel stone grinder flour mill and like an idiot sold it because I was gaining weight from eating too much yummy bread. Have regretted it ever since. The Wonder Mill is so compact and powerful. I don't have my coffee but I'm sitting here thinking you needed more liquid in your dough because whole grains really suck up the liquid more than commercial flours. 😉 That's also why so many whole wheat recipes use honey, it is a natural humectant which I'm sure you already know. Hope you sliced some of that bread up real thin like Bauernbrot...makes wonderful open faced sandwiches with some butter, cheese, onion, pickle and a good quality deli meat. That looked so delicious, now I want to bake bread but it's 7 p.m. Hooray for your first loaf of home milled bread!

I didn’t use honey because I’m saving to use it when I learn more about this, it will save money as I’m learning; but hopefully by the third or fourth batch I can start using it.     I agree best to avoid soy ... We have been brainwashed for many many years and our foods are so full of artificial chemicals. I watched some of her videos! Great tutorials she has. The flour looks so good. If too much, put in glass jar and keep in fridge until you want to use it! So excited for you. Yes, go with what you know to begin and learn. Wonder if you could use less flour for the softer texture? You have just confirmed what I have learned and thought about the whole grain flours. Thank you I've learned so much from this tutorial! This is exactly what my bread did when I made it. Thank you!!! Well, it looks good on camera! lol You are doing good ... that looks good Lippy. Has a pretty texture.       Good Morning Ms Jean, I’ll be completely honest, Buddy and I really liked the taste; but texture/ chewy was a bit much. I’m ready for round 2 when that Lecithin comes in today, so hopefully tomorrow when we will make our second loaf👍🥰.
      So much to learn, and well worth it for our health

    Ms Lippy I think you did a great job with the first loaf of bread from your mill. I know you will keep working on your recipe and will make a successful loaf like you like. I don’t have the strength to knead bread but I found a way to make some bread. I let my bread machine knead it for me and then form it into loaves or Buns and let them rise and then bake. I am like you I can’t handle all of the preservative that store bought bread has in. Thanks for letting us see you bake hope your hand continues to get well. God bless and lots of love 💕

      Good Morning Ms Bettie, a few times that hand screamed at me; but it didn’t swell as much as I thought it would. Buddy did say he liked the taste; but it was a dense bread for sure. I let it sit wrapped in a towel last night, so after PT I’m making croutons with it and keep in freezer.
      Buddy mentioned that I may need a bread machine down the road for mixing the dough; but hopefully Pt will fix me right up? I’m over the moon with this amazing gift, now I can learn this new chapter towards giving Buddy what he needs to be healthier 🥰❤️

    I haven’t been able to make a load as soft as store bought. Ever. Not with a bread machine or mixer to knead or by hand. Even following some videos I can’t get it right. It’s always too dense for a sandwich. Don’t get me wrong, I love a good hot crusty and dense bread. It just doesn’t hold up and is hard to eat as a sandwich at work in a baggie. I hope you can get what you are looking for because it sounds just like what I need to be able to make. ❤

    My mom picked up a hand crank mill recently and started baking with the home milled flour. I've been looking at mills for a couple of years but haven't pulled the trigger yet. The lecithin is an emulsifier so you'll get better fat distribution. I have read that it also helps to more elasticity to the gluten. The elasticity will help with the softness while not turning to silly putty like a lot of today's sandwich breads.

    I felt the same way after my first few loaves. Just exhausted. 😂 I have also “cheated” with Azure Standard’s unifine flours. They have one of two mills in the country that can mill grain while keeping the nutrition IN. You can read about it on their website. Milling your own is the best but sometimes we need a shortcut. And thank you so much for the tip on soy. I had no idea! Wish I had found you 10 yrs ago. Love you, Ms. Lippy.

      @@MsLippy it’s called “unifine”. Here is an excerpt about it from their website:
      Azure’s Unifine mill processes the entire bran, germ, and endosperm of the grain into a nutritious, whole-grain flour in one step. Instead of crushing or cutting the grain, the Unifine process uses a high-speed rotor with a single-pass impact system to instantly pulverize the kernels of grains, never subjecting them to the high temperatures common in regular grain milling. Using the entire grain without any heat means the valuable nutrients of ancient grains are retained, so the whole grain flours have longer shelf-life, better flavor, and more nutrition. In fact, Unifine flours are packed with many times the nutritional value than commercial roller-milled flours and stone ground flours - they contain almost four times as much dietary fiber, more than twice as much potassium, and three times as much magnesium.

      It’s called Kate Naturals sunflower lecithin. When I can learn more, I’ll be purchasing a more top shelf brand.

    Eaten only my own bread for last 15.yrs. Educational bread journey never ends. If I dislike a recipe plain, toasted w/ butter always helps. *Sunflower (& milk) Great. Traditionally used by European bakers often, sometimes w/ butter or lard. *Good Fats in bread absolutely necessary. *Malt does miracles, as can a touch of *Molasses + Good Salt. Whole Grain mixes need xtra fluids to absorb + bit more Yeast. Your seasoning instincts will kick in once bread basics do. -- xxoo 💌🍒. PS: not cheating to sift out most of the bran. Can be bad for those w/ IBS. Fiber nonsense for gut health - one big lie. Grinding Rice for a small portion of whole grain another way to make soft loaves.
