The MANY uses of CHOCOLATE GANACHE!

Hi, Bakers, I'm Crystal, The Cake Lady and today I want to share with you one of the simplest icings of all time, CHOCOLATE GANACHE! It has 2, (that's right, TWO) essential ingredients: Chocolate and Heavy Whipping cream! You can use whatever type of chocolate you like, but I have fallen in love with the miniature semi-sweet chocolate chips because they melt so nicely! As a general rule, you use twice as much chocolate as cream, so in my video I make it using 2 cups of chocolate chips and 1 cup of hot cream. That's it! You could always add in flavor extracts, coffee, or butter, but it is delicious exactly like I make it in the video.
Of course everyone knows it can be used as a glaze (like the super-trendy drip cakes), a full coverage frosting, a filling, piped borders or a whipped icing, but what you may NOT know is that it can be used to make TRUFFLES, CHOCOLATE MOUSSE, or as a fondue dip for strawberries, marshmallows, cake, pretzels....you name it! Keep in mind it won't harden, so this is not recommended if you're wanting to make chocolate covered strawberries with a hardened shell--this is more of a soft, fondue dip, but seriously SO DELISH!
Ganache will keep for up to three weeks in the refrigerator.
