Why There are More Parasites in Your Sushi than Ever Before

  • There is a parasite called anisakis that lives in fish used for sushi (and other dishes) and causes food poisoning in people who eat it.
    Did you know that the number of food poisonings caused by anisakis have been increasing in recent years? In fact, the number has been increasing especially in the last five years and the number of victims has doubled compared to 10 years ago.
    What’s happening?
    This is related to the increasing number of whales in which anisakis parasites lay eggs as a terminal host. Some scientists point out that this may be due to the apparent decrease in whale meat eating in Japan (although it is not completely terminated).
    Then should we just give up eating sushi? No, there is one point we can look out for.
    Anisakis can be killed by freezing it in an environment of -20°C (-4℉) for at least 24 hours. In other words, if a sushi restaurant properly handles this process, there is no problem.
    However, rather high class sushi restaurants often refuse to freeze their sushi because they believe that it is best eaten as it is. If you are concerned about anisakis, I would recommend eating at a sushi restaurant that is a major chain.

    I've said it before and I'll say it again: modern flash freezing technology is a miracle at preserving quality. It's worth it.

    In Italy it's, in fact, not legal for restaurants to sell fresh fish which hasn't been blast chilled before, in order to avoid poisoning by parasites in fish. If a sushi restaurant in Italy it's telling you otherwise they are lying or doing something illegal.

    As far as I know, both the EU and the US have regulations in place requiring sushi fish to be frozen, specifically for this reason.

    I was on a parasitology course and would like to add that parasites are also more common because of warmer waters. One more thing we can thank climate change for.

    I don’t think whales would be the issue. I’m more inclined to believe it’s the rise in temperature of the oceans.

    That is why the freshest sashimi are often the most dangerous ones. By the way, watch Cells At Work season 1 episode 4 titled "Food Poisoning" for more information on anisakis infection and how your body fights against it.

    The few times I have ever made sushi at home I made sure to get wild caught salmon that said previously frozen on the package and had today's date as the pack date. I did notice the freezing temperature you posted was -4 F, while the standard freezer temperature in the US (for regular freezing, not deep freezers) is 0 F. Next time if I decide to make sushi again I will ask the meat department what the temperature of their freezer is just to make sure it's a bit lower than what a home freezer would be.
