Nice tutorial! I cut my strip ends with the folded corner clipper ruler so I can just sew them together without worrying about marking or guesstimating the line. It is fast and no further trimming after stitching is required. The main reason to do diagonal seams is to keep all of the bulk from the seam from piling up in 8 layers. It can be a little lumpy. :) If you use flannel, denim, minky or other thick fabrics and are doing double fold binding, I definitely recommend diagonal seams! I cut my quilt backing cut offs into strips as well, but I don’t premake binding out of it because I might want to use the strips in piecing. I just keep them in a basket and make the binding when I need it. I love scrappy binding, especially if I can use up left over fabrics that were in the quilt. My last was a scrappy Irish chain using left over jelly roll strips. I pulled a few of the duplicates out in advance for the bindingg! My granddaughter loved it! I will definitely do it again!
Whew! I thought I was losing my mind trying to figure out why you were sewing from upper right to lower left and the entire strip was upside down and backwards until you commented that you are left-handed. I feel much better now. I store my finished binding all rolled in a flat circle in a hummus container that has a slot cut out of the side. The lid can stay on and the binding slips through easily. I have about a dozen all stacked up full and ready to sew onto a quilt. Scrappy bindings are great for kids quilts - they like to follow the colours around the efges.
One time, I made a binding with straight seams using 10" long strips. I did not like the bulk on all those seams, especially when they ended up in the corner. I use diagonal seams every time now. Opening the seams also reduces bulk, which I like.
So much better than throwing in a bucket like I do🤔 sewing corner to corner also equals less bulk in the seams I will go either way depending on project being made as you say “just do you”
I have yet to make a scrappy binding...I would not mind the making of it, but would hate dealing at corners of quilts. I have been using spools to store leftover binding for ages...but I use regular spools...and I use a straight pin to secure the end. I had not thought of using the newer spools and can see making binding and storing it that way. A great idea.

I enjoy making scrappy bindings but I never get thru it without flip flopping seams! Sometimes I laugh & sometimes I could just cry! I roll my binding around my hand & use a clip in the center but I knew I kept thread spools for a reason! Thank you!

I don't fold my binding until I am actually sewing it to the quilt. I roll it up on paper towel or toilet paper cardboard. Thanks for sharing.

Slanted seems reduce bulk, but likely not too much less than a straight seam and pressing the seams open.
