Enjoy 87yr old Ida's hand rolled macaroni with porcini mushrooms! | Pasta Grannies

- Ida calls her pasta 'maccaruni cui feri' while in Italian it's maccheroni, but however you want to call them, these hand rolled macaroni shapes are fun to make, and are delicious served with freshly foraged porcini mushrooms. You can of course use ordinary mushrooms. This dish is vegan up to the point you add optional cheese at the end. Here are the ingredients:
for the pasta: 200g 00 flour, 200g semola rimacinata, 200ml of water.
for the sauce: 500g diced mushrooms, 1 garlic clove, 500g bottled, tinned or fresh tomatoes, handful basil leaves, salt, extra virgin olive oil
It's incredible to see the difference in local ingredients like olive oil. When you buy it in Canada, you know what country it comes from. When you buy it in Italy, you know the exact village. I bet it smells amazing.

As much as I love every granny in this series, I’m equally in love with their beautiful kitchens. They may not be the most modern, although most have all the convenience items you could ever want, they are full of character and made to last, just like the grannies themselves. It is so different than the all white and stainless steel popular in my part of the US right now, and I’m so glad. Everyone is different though, so you should have whatever makes you happy in the kitchen.
The kitchens definitely don't follow fashion and owners see no need to replace them while they're still in one piece! 🙂🌺 best wishes, Vicky

My mother would have thoroughly enjoyed these videos. How I wish she was here to watch them with me! She told me how her mother made pasta so quickly and easily and always made enough to share with neighbors. That was here in America. My grandmother came here when she was a young married woman, leaving her family in Italy. Ohhh, how wonderful to have access to fresh porcini. I forage for mushrooms from time to time with a knowledgeable friend, and we do sometimes find porcini, but they are fairly rare here. So delicious.

“Less is more !”, I would say that is generally the motto of Italian cuisine and it is also what makes it particularly tasty. Few ingredients but good and genuine ! As opposed to, for example, American cuisine, where the motto seems to be "just more, it's more !", filling dishes with lots of ingredients and sauces. Simplicity is what pays the most in cooking.

Food is also healthier. I read that people (who can't eat gluten) who visit Italy don't have any issues. When they come home they become sick again.
@@footyfan101ful Part of the problem is American wheat fields are sprayed with glyphosate, a weed killer. Many people who think they have gluten intolerance are actually reacting to the glyphosate. Italy doesn't spray its wheat fields with it. I buy all my flour and pasta from Italy for this reason.

No idea what is semola rimacinata, can anyone help?
It's durum wheat flour, milled twice. It gives that yellowish colour and a certain bite to the pasta and it's perfect for bread and pizza as well. The other one is soft wheat flour, commonly used to bake cakes. Hope this helps!

The 'rimacinata' means 'milled again', so it's the very fine variety. I think you're generally likely to find it in France, here in Belgium most supermarkets have it.
